I save every single ‘tossable’ veggie part! I throw them in the freezer as I collect them, then toss them all into a pot to make veggie broth with when I have enough. ❤❤❤

I am not a fan jackfruit at all, so I’d love to try this recipe. I’ve read, though, that hearts of palm is a problematic ingredient to use because it’s not at all environmentally friendly. The harvest kills the tree, so it’s a resource hog. However, I haven’t researched the issue at all, so please take my comment with a grain of salt. It’s barely even worth that, so if anyone can refute me, please let me know. It’s always good to learn something new each day.

It depends. I'm not an expert right but this is all what I've learned. Hearts of palm can come from many types of palms. My understanding is that if it comes from coconuts it comes at the end of the plants life because the coconuts are more profitable. Other types of palms don't require destroying the plant. Apparently hearts of palm in the US can often come from Hawaii and Costa Rica so potentially more controls and oversight.

@@twothirdsanexplosive Thank you very much for the information. I did a bit of research and it seems like it depends on the species of palm used, but that in general it isn’t a sustainable crop. Certain companies use older trees, but others don’t. I don’t know which type doesn’t cause destruction of the entire tree, but that’s a good thing. Hopefully more and more people shift to using this method. Thanks again, I appreciate the information.

I'd cook the sauce and add it to the marinated hearts of palm (raw) to keep their crunchyness and/or squeakyness.

Tried this with a little jalapeño and a splash of liquid smoke. First time trying heart of palm as a meat sub. Overall tasty, though the palm has a unique texture that I can't put my thumb. 👍👍

Awesome idea. I do this with jackfruit too. I personally avoid palm products because the deforestation problem in the Amazon. Palm is one of the main consumer products contributing to deforestation.

FYI because there is some important nuance here. Palm oil is different from hearts of palm. The Elaeis genus of palms is what is used to produce palm oil and the plantains are absolutely causing massive deforestation in island nations of SE Asia and Oceania. Hearts of palm come from various other palms like coconut, palmetto, açaí palm, etc and those are all different genus than palm oil palms. There are still challenges for those but not the same issue as what's happening with palm oil. Cattle and soy bean exports for cattle feed are actually the biggest contributors to specifically deforestation of the Amazon.

The little small garlic pieces are called bulbs (baby garlic). You can plant them and grow your own.

Love it. It is excellent with shredded cabbage (if you don't want the full coleslaw) and French-fried onions. Also, if you like it a little sweeter and less vinegary, add your favorite agave/sugar.

4:00 same garlic problem here, what I do is use the tiny cloves for recipes where I'm going to use a food processor anyway, so I don't have to bother chopping the tiny garlic cloves. Also very useful for just infusing some oil with garlic, give em a 'kenji lopez alt smash' and throw in whole :D

Throw hearts of palm in the dehydrater and then trying cooking it, I bet it gets a even better texture. I haven't done it, but I believe it would be a good candidate. When I ate meat, I used get dry sandwiches with sauce on top.

I bet if you had some extra time, you could spread it out on a baking pan after you shred it, and dehydrate in the oven for a while to increase the texture so it wouldn't be so soft. I know what she means, I have the same issue with jackfruit. It can be kind of mushy. But I know this trick works with jackfruit, so maybe it would work with HoP too.

The garlic I buy at the grocery store also always has tiny cloves, as well as HUGE cloves. I usually use a huge one as 2 and a few of the tiny ones to add up to one instead of wasting them.

it's so annoying tho because it takes just as much effort or more to peel the extra tiny cloves. if you get a boat load of them you can shake them up in a small bowl and sometimes not have to use too much effort. they don't work well in my garlic press either.

For the garlic you can get vac packed peeled garlic bags from fruit and veg stores that supply restaurants and other wholesale customers. Might be quicker to call around and ask if your in a city and don't know of one you usually see delivery vans and trucks in their carpark

Hey, this looks awesome. Just wondering does the cooking the hearts of palm in the sauce end up making it less firm? How do you think oven roasting and then tossing the sauce right on the end would go?

It turns to mush. When you follow his directions. I'd try frying the hearts of palm separately adding your bbq sauce to it. Leave the green peppers and onions out. No meat eater would make pulled pork bbq like this.

As delicious as they are, they have detrimental effects on our environment and contribute to deforestation since they come from palm trees which then need to be cut down. I suggest using something similar like jackfruit or shredded oyster mushrooms!

I have had recipes in this style with hearts of palm and I think their textures is 100x better than jackfruit.. Most people (including myself) don't know how to cook jackfruit without ruining its texture. When they are in season. here in Brazil we have them growing on public trees, free for the picking (in the capital Brasillia, where I live), but it's such a hastle to cook them, they are so huge they don't usually fit in normal sized pressure pots... and how to know how long to cook them for?... Anyway, just sharing... hahaha

For the jackfruits, it is way easier to wrap them in foil paper, then toss it into the oven. After one hour, check every 30 minutes, it is done when it is soft. E a melhor jaca grátis é a do parque da cidade!

No they are not. Palm oil comes from a genus called oil palms. Hearts of palm can come from coconut palm, palmetto palms, açaí palms, etc and those are all different genuses than palm oil palms. Palm oil is causing issues in Indonesia and probably other surrounding regions. Other palm trees can be issues but it varies and is a lot more nuanced.

I just made the jackfruit "pulled pork". I don't think it would fool anyone I know and if I brought it to a barbeque, someone would fight me. My fiancé ate it all though. I'm still on the hunt for the filling that will be more meaty.

I make ‘pulled pork’ using butler soy curls (hydrate them for 10 minutes first) and a bottle of bbq sauce. You can cook it in a pan on the stove, or cook it in an instapot for 50 minutes on the ‘slow cook’ setting. There are several videos for it here on youtube. For me jackfruit pulled pork didn’t taste hearty, meaty, or full of protein, like real pork does. But the soy curl version totally does. Even my carnivore husband loves it.

I bought the huge case of soy curls after it was recommended. I still haven't managed to get it to cook to a texture anywhere near meat. I boil it twice to get rid of the beany taste, then airfry it a bit to improve the texture. @@heatherl8063

To everyone wanting to try this recipe: PLEASE use a substitute for hearts of palm, like jackfruit! Harvesting hearts of palm is horrible for our environment, since it comes from the core of trees in the Amazon that consequently need to be cut down for them to make these palm products. There are so many alternatives that aren't contributing to the already prominent deforestation problem that we are suffering from, I urge you to take a second a check out other possibilities that taste very similar! Other than that, this recipe looks delicious!

Had trouble finding the recipe on the website or in the comments so I had an AI watch the video and make an easy to follow recipe from it: Recipe: Hearts of Palm Barbecue Sandwich with Coleslaw Ingredients: For Coleslaw: - 1/2 cup vegan mayonnaise - 2 tablespoons agave syrup or your favorite sweetener - 1 tablespoon white vinegar (rice vinegar can be used for a sweeter taste) - 1 1/2 tablespoons lemon juice - A pinch of salt - Freshly ground black pepper, to taste - 1 18-ounce bag of coleslaw mix For Hearts of Palm Barbecue: - 4 cans of hearts of palm - Vegan butter or oil, for cooking - 1 sweet onion, sliced into long strips - 1 green pepper, sliced into long strips - 1/2 red pepper, sliced into long strips - 3 cloves of garlic, minced - 1 teaspoon salt - 1 teaspoon garlic powder - 1 teaspoon black pepper - 1 tablespoon smoked paprika - 1/4 cup water - 1/2 cup ketchup - 1/2 cup barbecue sauce For Serving: - Burger buns or bread rolls Instructions: 1. Coleslaw: - In a bowl, prepare the dressing by combining vegan mayonnaise, agave syrup, white vinegar, lemon juice, salt, and black pepper. - Mix well and set aside. - In a large bowl, toss the coleslaw mix with the prepared dressing until well coated. - Cover the bowl and refrigerate for at least a few hours or overnight to allow the flavors to meld. 2. Hearts of Palm Barbecue: - Drain and rinse the hearts of palm. Mash them down and separate them into strings. - Place the mashed hearts of palm in a strainer to remove excess liquid. - Season the hearts of palm with salt, garlic powder, black pepper, and smoked paprika. Mix well. - Set aside to rest for about 15 minutes to drain off excess moisture. - In a large Dutch oven or pot, heat vegan butter or oil over medium-low heat. - Add the sliced sweet onion and cook until softened. - Add the green and red pepper slices to the pot and cook until softened. - Stir in the minced garlic and cook for a few more minutes. - Press the hearts of palm to remove any remaining liquid, then add them to the pot. - Allow the hearts of palm to cook for a few minutes to steam off excess moisture. - In a separate bowl, mix together ketchup, barbecue sauce, and water to create the sauce. - Pour the sauce over the hearts of palm in the pot and stir to combine. - Partially cover the pot with a lid and let the mixture simmer on very low heat for about 10 minutes, stirring occasionally. 3. I've never heard it called anything other than cat tail. I don't remember the exact flavor but I also don't recall the exact flavor of hearts of palm. I know one spring when I was really poor I used to eat cat tails. I'm surprised they aren't a common supermarket item. I may bring them to market myself. I've heard in Russia they are common in stores. Just cut out that interior white flesh and its really pretty good. Just have to be careful of the water you harvest them from.

I have several question for you.... 1. Have you ever eaten meat? 2. Who told you that pulled pork had green peppers and onions in it? Not a meat eater. Okay honest assessment on this recipe. I know what meat tastes like and feels like. This comes nowhere near a meat substitute ! 🤮 I prepared it as you said. It turned into pure mush with onions and peppers. This is the worst tasting crap I've eaten. Total waste of my time and money. We're trying to eat healthier after my husbands first widow maker heart attack in 2019. He just had a second heart attack last week. I'm truly starting to believe it's the fake meat, and the saturated fats in the vegan diet.

I asked him in the comments, and he replied that he doesn't believe in promoting them (i.e. animal source foods/products) anymore. So, I'm just wondering if he has gone from pescatarian to vegan. On one level, I don't really care. His mouth, his choice. I'm just curious.
