Glad to see you flip from the pan.So many people (chefs included) try to flip with a spatula, and wind up making a mess.I am 88 years old ans have cooked omelets all my life. I NEVER try to flip with a spatula. Love your video!!

I've watched several videos and have been looking for this method for a week now as I saw it done in a buffet line. I even saw one of Jamie Oliver's and his method was alot of work and not all done in one pan. You're the only one that showed a 3 fold method and that looks super. I'm going to try that one first. i was taught by 2 classically trained french chefs that french omelettes are to never have any brown coloring at all. still looked delicious and in my opinion, as long as the egg is cooked, have at it. great video

One of the best omelette-cooking technique videos I've seen on KZbin. You're amazingly calm and confident. Kudos, brother. I've cooked eggs in many ways since ever, but making omelettes (specially cooking on the other side), has always been a bit intimidating.
