I use 1 Cup of All Purpose Flour And 1 Cup of Semolina Flour & 2 Eggs & a tsp of Olive Oil, when hand mixing my Pasta Dough I start it in a Bowl, First, Then on to the work surface to Knead it Less messy this way etc Thanks for sharing etc.

I know it can be frustrating. However, the reality is, conditions that are specific to your kitchen (the size of the eggs, the humidity in the air, the altitude, the amount of flour spilled off the board, etc) all influence the ratio of flour to egg. So in my kitchen in San Fran, it may be 3 eggs, in someone else's 2 eggs. What you're really looking for is the consistency of the dough, and you adjust the flour to hit that consistency. Sorry...but that's just reality.

U don't need to knead it for 5 min, mix it up let it rest for 10 min and not in the fridge, I come from a long line of pasta makers, I've been making pasta almost 50 years

A tip for when your dough is done and ready to be stored: while the gluten is still warm and pliable, make your dough into a shape that's going to be easy to roll out when you take it back out of the fridge. Work easy, not hard!

well, if you want to spice things up, puree up a few tomatoes, add a bit of ketchup, black pepper, honey, salt, garlic paste, ginger paste, and cumin powder. You can virtually throw anything you want into it and have it taste really nicely sweat tangy and salty. I use it as a quick meal cheat. I just have the ingredients stored in tupperware in the fridge. Pretty handy, and very cheap.

It's a ratio, so it depends on the amount of flour. I generally use about 2 eggs per cup of flour. If you're just using yolks, I'd guess 2 yolks = 1 white.

How many eggs and flour? I remember when small my babysitter made pasta and I sort of knew but not tht well and she rolled it out like pie dough and left it all day to dry on a towel on the beds. Then she got them off beds in order to get ready for Supper before the family came, and rolled it up ( Like a cigar but much longer) and then cut it right on down through width wise, Opened each one up, and placed into boiling water with some salt in She used lot of egg and flour though as she seemed to make more and that is most likely why. She did it like it as easy as she could make the sauce while the dough was resting, on the beds, on a towel. So this way is really new to me to see. Quite interesting and does not take as long to rest in Refrig. We loved her Spaghetti. Need to try this way and am sure it will be very special too.

Good recipe. Every time I try to roll out pasta dough with a rolling pin the noodles turn out slightly bumpy. I can never get them smooth unless I use a machine roller, and I can't find a decent one to buy anywhere. Any tips/tricks to make them smooth by rolling by hand?

Fresh pasta cooks very quickly. It will depend slightly on thickness, but just a minute or two in salted water.

Semolina flour is best to use for stuffed pasta. You can add simply water to semolina if you are rushed for time and ingredients when mixing it. Run it through a pasta roller several times instead of kneading it to make it elastic, once it has rested.

I don't think it needs to be very accurate, and the quantity will very based on your particular flour, size of eggs, even the humidity. Best to have extra flour standing buy that you can work in, if the dough is to wet/sticky.
