In trinidad we have a very close equivalent called baigan choka where its roasted eggplant on the gas stove top with garlic placed in it and then you scrape the flesh out. Mash it and the garlic, add salt, scotch bonnet pepper and mix. Then heat oil and add it to "chonkay" or fry the eggplant mix and then mix that in. It looks really similar to your dip. And we eat it with sada roti.

Oh my goodness, so my parents are both from Trinidad but they had me and my sister in America. My dad talks about that all the time and he says that he used to eat it a lot growing up. He's made it for me a few times and tbh it is soooo good.

Yeah it was go from india to trinidad and tabago during 19th century when north indian worker migration happened. We say baigan ka bharta and baigan chokha both.

You can just cut the top off (leaving all the skin on), drizzle olive oil on top and just put it in the oven on the baking tray like that. Or you can put it in a ramekin with olive oil.
