I'd love to try tiger nuts sometime but I'm concerned about the ethics of it, like what the tigers have to go through and the risks taken by the harvesters to get it to my hands

This is one of the first/only videos I've ever seen on the original horchata with chufas! Looks so simple like it should be, just the nut/seed/rice and water, NO DAIRY. Mexican recipes with condensed milk are sickening me lately. Somewhere along the way adding milk became a thing and it ruins it for me now that I wanna make my own. Looks like a nut milk bag is the secret to extracting all possible flavor without adding anything else for the creaminess.

horchata made from chufa is a lot richer because the seeds have high oil content like soybean and peanut. Mexican version is made from rice, and rice has no fat in it, so in order to add richness to the Mexican version, they add wholemilk, evaporated milk and condense milk to increase the fat content in the drink.

Not really, when horchata is made with almonds, it’s usually sweetened and flavored with cinnamon, which it would most likely not be if it were called almond milk. I don’t really see how this isn’t just tiger nut milk.

The authentic horchata is a recipe from Africa, taken to Spain by the moors. I guess that's why Spanish also call tiger nuts chufas. Use dates instead of sugar for a healthier and more authentic recipe.

It isn't known where the recipe originates but the most probable it's that was originated in Valencia, chufas grows naturally all around the mediterranean (its name come from valencian/catalan "xufla" and before latin "sufila/sufilare"), and it's known that people did almond milk at least since the romans, and orxata is made the same way. There are recipes,like this one, like omelette,flat bread, butter, orxata, that were invented by serendipity over and over in diferent places and ages. The name though is said to come from an event when the king James The Conqueror stopped at the side of a house and the woman of the house offered to him what she said was "chufa milk", the king drank from it and said "Aço no és llet. Aço és or, xata!" (This isn't milk. This is gold, girl!); but this is a legend, it's most certainly not true.
