yes indeed (short but fatty), and this type of bean sprouts should not go for stir fried, it will ruin own flavour, crunchiness and the juicy. (that's why most people use those slim and long type bean sprouts). Ipoh bean sprouts just need to boil for few seconds then dip with good combination of aroma oil and soy sauce (salty type), then add garnish like green onions or fried onions (optional). Or eat with yong tau fu (soup based).
