Fried banana fritters / Cekodok Pisang
Try this Malaysian favourite street food cekodok, also know as jemput-jemput or kuih kodok. This is a common snack/dessert that everyone love to enjoy during tea time. If you have overripe bananas and not sure what to do with it, this recipe is perfect for you. Written recipe below …
Note:
1.) Adjust the amount of the flour if you prefer soft fritters.
2.) Do not add sugar if you use lesser flour, or adjust the sugar to your taste.

Recipe:
300g mashed banana
100g-120g or more flour
1 tsp baking powder
1/2 tsp baking soda
1/4 cup brown sugar
1/2 tsp salt
Method:
1.) In a small bowl mix together flour, baking powder and baking soda. Mix well and set aside.
2.) In an another bowl mash the banana. Add in the brown sugar and salt. Mix till well combine.
3.) Rest the dough for about 30 minutes. Meanwhile heat the wok with enough oil to deep fry.
4.) Use your finger to take about 2 tbsp of the batter. Try to make it as round as possible.
4.) Fry the banana fritters until golden brown. Remove from the heat and place the fritters on kitchen towel to remove any excess oil from the fritters.
