I love sting ray too - have lots of fond memories of kari ikan pari eaten at coffee shops in Ipoh.

I'm gonna try it soon. As for the grilling part, I used the banana leaves and also the aluminum foil to wrap the fish up, so that the juice won't spill. I used to grilled ikan cencaru (hardtail scad) or ikan kembong (mackerel) too. Taste good too.

i see sting ray daily in our local fish market, but i never even tasted them before, next time i see them will surely buy and i will make this dish... have plenty of bananas in my garden and using banana leaves for grilling is usual in my place....

For Ikan bakar, sometimes I choose trout fish filet, a river fish here in switzerland and it's also really nice to do it. By the way I enjoy your recipes, thanks helping me became better with malaysian food :)

If it possible add tumeric leaf to absorb the unpleasant fish smell but as you are in Germany so kind of hard to get tumeric leaf. I think it should settled with only with tumeric, but alternatively we can use tamarind also to reduce the smell too. You can buy tamarind paste at asian store. Making tamarind juice: 1 tbs tamarind paste and 2 tbs water (or you can add more water/tamarind paste if you like thick consistency). I hope it helps

I've eaten this dish many times, and mostly, the ppl that cook it are not good at making the marinade. Often the dish comes out black (overcooked), tasteless (poor marinade) or just plain disgusting (bad recipe). There are few instances of course where the dish came out perfect, and these are few and far between. In such instances, the dish was exceptional and the person that cooked it is indeed a true grill guru.

this video is very well made. im amazed with the portugese style grill fish i had in petaling street. your version looks different and delicious too! i wonder if this recipe is the same like the one with alumunium foil and cook with charcoal ?

+claralunalove I would use 1/3 tsp of tamarind paste. If there is not enough of sourness, you still can add more. Less is more :)
