made this last night - it was SO good. I used the adabi brand kurma powder, and replaced the carrot with red bell pepper and regular tomatoes with halved cherry tomatoes (added those at the end of cooking), also a handful of spinach for some greens.

When you were halfway through I thought, "Hmmm, is that skillet too small? . . . " You did manage to stir the ingredients skillfully, though, and ended up with a bountiful looking pot of delicious stew! Thanks for posting : )
