Hey Brad, what I have is a smaller rectangular grate criss crossed on top of the WSM fire grate. It makes for smaller openings so smaller pieces don't fall thru. Thanks for watching

Finally, A full presentation of a meal.. I know this is a meat comp But everyone invited can cook meat or they wouldn't be here.. You could have just put the finished platter up and that would have been enough...Great job through out the whole video. Prep, showed the pit, explained the wood/charcoal and why you are using it, every time that lid was removed you told us why. I wish it had of been 10 minutes shorter BUT you used that 10 to the tee... I think I've said enough... Top 3 so far of all the video's.....

Thanks Lawrence, if you are cooking at home without cameras involved, you could leave it on. I'm in to symmetry so I always remove and trim, it encourages even cooking as well. After separating, you can cook them both at the same time. thekansascitybbqstore.com is a one stop shop.
