When I get a “weaper” and lots of liquid fat pooling on the surface of the brisket I’ll try to pick it up and tilt it mid cook to stop all the liquid from staying on the surface

I tried this brisket this week end I rounded all my edges and sprayed it with I can't believe it's not butter . My sides where turned out hard and crispy and did not slice well . any idea what I did wrong or what I could do

What are you cooking on? How hot were you cooking? Is there a water pan in your pit for some additional moisture? Meat too close to heat source?

@@cristenfaught8799 300 is pretty hot without some additional moisture added to the pit. I run my offset/indirect at 300 and I place an aluminum half pan filled with water on the grate at the entrance from the fire box.

My buddy James sent me over to check out y'alls collaboration. Beautiful pit btw! It's really hard to beat a Jambo or Klos pit. Love the 2 Gringos Chupacabra brisket magic. It's my go to. That and heavy coarse ground fresh black pepper is hard to beat. Sometimes for balance I will use a little Kosmos Texas Beef. Though the bark wasn't perfect I have no doubts about the flavor of that brisket. So juicy! I subscribed already and look forward to your future videos.

ABSOLUTELY NOT! I love and use my Traegers 3 plus times a week. Start your cook using the supersmoke mode if your Traeger has that function. If it doesn't, find youself a smoke tube and add it to your cooking chamber.
