We never cook our home made achar, this is something new. But we do dry our mango a little by the sun light for a day or two.

That’s one way of doing it, also, I would chunkay garlic pepper and masala and geera or achar masala and then add the mango and fry for a few minutes

Thanks, yes you can use Olive oil but Mustard oil give it the flavor and also helps to preserve it.

Regular vegetable cooking oil is ok to use if you do not have mustard oil.

I bought in West Indian store that says AMCHAR. So your armchar and your achar and mine. It’s all mango kidd. I even had apple done with it... but u correcting someone’s and u calling it armchar lol

I want to add that she's using a spoon for the pepper portion, because the spice stays on your hand for sometime and can burn things like your eyes if you touch or rub it afterwards.

I cut up mango yesterday to make achar but the mango becomes spotty with a dark color. Can I still use it?

I would not use it, once you cut up the mango it should be used right away. If it is spotty when you cut it then it's definitely not good.

Yes you can use the regular Garam masala along with some roasted ground geera ( cumin ).

Natasha Ahammad always keep the achar covered with a bit of mustard oil. That way the white doesn’t form on top. The oil preserves it.

🙂Hi, there is a special masala called 'Amchar masala' or 'Achar masala' . If you don't have this then you can use the regular garam masala, this is what was used before, long ago before the Amchar masala.

Hi thanks it's Achar Masala, it is a spice for pickling which is used for making Achar. It is made of a mix of spices together like fennel, cumin , coriander etc. We always buy it though. If you can't get that then regular Garam Masala will do. Here is a list of ingredients if you still want to explore the recipe. These are blended and mixed together. You can use less of each ingredient to make less. 50 gm Coriander Seeds 50 gm White cumin seeds 50 gm fennel seeds 50 gm Chilli 25 gm Mustard seeds (Black mustard seeds) 25 gm Nigella seeds ,Black seeds) 2 Tbsp Fenugreek seeds 3 Tbsp Red Chilli Powder 2 Tbsp Turmaric powder

Yes you can use regular cooking oil instead. Mustard oil is made from mustard seeds and is usually used for achar because it helps to preserve.

It's a condiment, used like pepper sauce is. It is eaten mainly with vegetarian dishes. Some have it with Pholouri and Bara etc. too sometimes
