Skillet is too hot for this type of dish. As you can see, bottom of the first batch is too browned, which should have no burn marks. Traditional cooking anyway.

U will not get this shape in a circular pan but you can still try with different shapes.

Nice omelete But you are using plastic brush for oiling in pan

That brush is a heat resistant brush for non-stick pans. It is safe to use
