@@steveludwig4200 That's funny.😂I definitely still have a freezer full of my beloved Hatch chile. I just feel bad pulling it out so easily when I get comments from people saying they don't have access to it. But don't worry, I'll be using plenty of Hatch chile in recipes to come.

Use an air fryer 400 degrees 15 minutes to roast. Such a game changer for roasting and peeling your chili’s. The peels slip off so easily. I did 10 pounds of hatch chili’s, peeled and ready to go in 10 minutes.

I so completely agree with you on this! I have fought against using an air fryer (I'm a tad old-fashioned) for what seems a long time...as you said. Game changer. I own a rather expensive convection style oven but the simple counter top air fryer wins every time!

@@shawnp6653 No, it’s not necessary. The skins are fairly dry when finished and peel right off, sometimes in one great peel. Game changer!

I was looking for something to make for dinner and here it is! I have a bunch of Hatch green chiles that I grew., roasted, peeled and freeze dried last summer, and I have chili left over from last night's pot of chili. I haven't even started and dinner is already half done. Thanks Marcy!

They are Anaheim unless grown in the Hatch valley. Maybe that is where you live.

@@campfarwest2288 No, I don't live in Hatch, although I used to live in Cruces. I did however, buy a pack of seeds that say they are Hatch Chile Pepper seeds. Pretty sure that makes them Hatch peppers, otherwise the company could be accused of false advertising.

That looks amazing! Now I have to figure what I'm making for Saturday lunch because this made me hungry. I really like the idea of the chorizo too. All in all, I enjoy "bakes" or "casserole" dishes. Normally, they are very delicious and it seems to me, they're even better tomorrow when everything melds together. Another great job on this video drop and thank you for sharing!

Chile Rellenos is one of my favorites. Everywhere I go I try them at the various Mexican restaurants. I rarely find one as good as one restaurant I went to years ago. So... of course I had to make them home made. Nothing like it in the world and I love stuffing them with ground meat. I have made them the traditional way and casserole as well, but this recipe looks amazing, and I can't wait to try. My ex was of Mexican heritage, and he made the most amazing homemade sauces. He is the one who taught me to make my own taco seasoning homemade, so now I have jars of mixed seasonings for dishes from around the world!

In my youth, and throughout most of my early years I did the same thing, trying out different Mexican restaurants both here in the U.S., and all the way down the Mexican western coastline (not the Baja) all the way through down to Chapala, Jalisco riding down on either Rt. 15 or 150 on our bikes (Harley's) back in the late 70's. It was GREAT!! Good memories had there indeed. It's amazing the difference in cuisine once you leave the comfort of the border. Anyways, try mixing 60% 70/30 beef (a little more fat is good), with 20% ground pork and 20% good quality chorizo as your stuffing. Mix up some sauteed and chopped Anaheim's into the meat mixture instead of only "ground meat". Try it, you'll thank me. ; - )

Hi Marcy I love Chile Rellenos casserole, watching your video made me want to make some lol!! I cook small things since i live alone. I cook a lot when I visit my daughter and her family, my grand kids love it when I bake Banana Nut Load.... & so does my son-in-law 😁 I've shared some of your videos with my daughter, she is a very good cook, she makes a very tasty Green Chile Chicken/Port Posole, its a lot of fun when we cook together and enjoy our time together. I have 4 grandsons 3 of them love to cook and my only grand daughter cooks but loves to bake also.. Have a wonderful day, see you next week!

It can be challenging to cook for one, but it's important to be good to yourself. Plus, when you go out of your way to make something nice, you can enjoy leftovers for the rest of the week. I think I grew up on this basic recipe. No meat and layered chilies and cheese. We used a blender for the yolk flour mix. It’s so yummy for a quick weeknight dinner.

I'm a big fan of Hatch chile, and have a year's supply in my freezer, so it's rare that I use anything else. But this was definitely good, especially with the chorizo. I'm happy you found my channel. Thanks for the comment.

The stuffed chilis i ate while growing up in Mexico were dipped unto the whipped egg mixture without the flour or the milk. They put ground meat in them with a chunk of cheese. Fried the costed chilis and then dimmered them in a tomato sauce. It was good.

For roasting the chilis I use the air fryer and turn them once at 6 or so minutes. I just leave them in the air fryer until I am ready to peel. Makes this dish way easier.

I don't remember the brand been awhile but the chiles tasted like tin or briny. I believe 505 and another brand sell frozen ones at grocery stores here in Surprise.@@marcyinspired1442

3:26 - "Hatch" brand whole green chiles come in those same large cans at Central Market and some HEB stores in Texas. They would probably work well in this recipe.

Well my mom made them by dipping n frying, a lot of work. I only made once on my own n loved them but decided it was too hard. I’m trying this recipe looks simple n delicious. I’ve subscribed n look forward to seeing recipes with measurements of ingredients as mom never measured so I also guess but mom was a good cook but now she’s 93 years young n doesn’t cook anymore. I miss her cooking as well as my dad. He was a good cook as well n his recipes were easier n he’d give me an amount to add but always with about this much. lol. 😊

My daughter lives in west Texas and every once in a while the grocery store will have a pit set up outside where they roast the peppers for you. She buys 5 pounds of them & shares them with her sister, my wife and I. They roast them & put them in a plastic bag. Up to the buyer to peel & de-seed them.

I live in NM, and most of the grocery stores do that during chile harvest time. They put them in a large metal drum that they turn over a flame. The fragrance of roasting chiles is in the air from Sept to Nov. A half bushel lasts me for the year.

Been searching since the mid 80's for something close to my former girlfriend's, abulela's, recipe. I think it was made with the hatch chilies and of course the chorizo that made a huge difference. No restaurant can come closes.

What a great idea to place them in the oven! In the past, I have fried them in a skillet and it’s just so messy. Going to try your method. Also, I have only filled them with picadillo but like the suggestion another viewer made and that’s to fill with potatoes and chorizo.

I am from New Mexico so I do prefer The Hotter Hatch Chilis - but for the Poblanos I like the your addition of the chorizo that would give the poblanos some flavor Thank you 💙🦋💖

I can't wait to try this recipe!! I love chile rellenos done the classic way, but I just never can seem to wind up with stuffable roasted poblano chiles. This will solve that problem so well! The one change I might make is to add finely diced serrano chiles and top the whole thing off with some really good Crema. Thanks for sharing!! Your videos are absolutely excellent!!

This looks fantastic! I rarely make chili rellenos, but when I do, I add jalapeños or habeneros because i like the heat. A Mexican friend's grsndmother wants me to get a DNA test because she thinks that I am psrt Mexican and just don't know it. Another excellent recipe! Thank you!

@marcy inspired I live in a small town with one grocery store and I'm fortunate that they at least have these Ortega chilis. Whole is the way to go, something about the diced ones that I don't like, kinda like cheese that's pre shredded haha. The only origin I can find for Ortega chilis is that they've been around since the 1800's and they're chili seeds originally came from New Mexico. Hatch is always best but hard for me to find, might start using home roasted poblanos, they look pretty good.

Thank you!! I’ve just now decided to try making relleños and this is so much easier. I just wish I could print the recipe to have on hand while cooking. I have MS and vertigo and have started having more difficult concentrating so I really have to study recipes so I don’t mess them up. I think I’ll add some shredded chicken because my husband prefers chicken and I have some leftover from making taquitos. I can’t wait to try them! I forgot to mention that this recipe got me to subscribe. 💕

The hardest part is just roasting and peeling those chiles. Next time, I'll have to buy those whole canned chiles for an even easier alternative. It's always good to have something you can whip up quickly when you're pressed for time.

I would make a tiny suggestion. Stuff the peppers and have them ready to go in the casserole as soon ad the batter is done. This will prevent the separation of the batter we saw here.

I love love casseroles! I might add the Chorizo with the cheese, but I'm thinking maybe I'll add refried beans and cheese just to see how that tastes....either way, Mexican food is the bomb, because I can't get enough! Love your videos Marcy 😊

Love it. I usually end up making a casserole because I almost always have a hard time stuffing them. Watching you do it I think I discovered what I was doing wrong (I would try to clean & cut them open in my hand leaving the stem and doing the "T" cut thing). As such they'd often rip open. Hence the casserole 9 out of 10 times in our house. Also, something occurred to me after you pulled it out. Would a light spray of oil on top just before being done (maybe 5 to 10 minutes prior) create sort of a fried crust to the batter? Maybe even broiling for a minute or two? In any case, as always another outstanding video! In answer to your question about what to put in diced par-boiled shrimp, or other seafood, or diced par-boiled potatoes and/or hard boiled diced egg whites perhaps (be good with the chorizo).

Great! Have some Poblanos that are ready to come off the bush but don't have the energy to try traditional chiles rellenos again. Made a big old mess! Definitely going to try this baked version. Gracias!

Well, the grocery store finally got in some poblanos larger than a jalapeno, so I cleaned them out! :) We have it in the oven now - not as pretty as yours, but it'll be good. Thanks Ms Marcy!

This looks delicious. We only use Hatch Chili. If we do not get the meaty ones, the meat of the chili is very hard to stuff. Do you think that we could make your same casserole without stuffing the chilies and kind of just layering the ingredients? We don't like chorizo. Maybe we would try it again. I guess we would have to use ground beef or do you have another suggestion?

You can definitely lay the chile flat and layer like a lasagna. The chorizo is just optional. I added it because poblanos are usually so mild, I thought it could use a kick. If you want to add a protein, ground beef, shredded chicken or pork would all work.

Have you ever made it with much less milk in the batter, love relleno's with burger, onion filling, also one of my favorites is chicken and queso cheese sauce poured over the top an some inside with the other cheese. Thanks for many ideas, love the videos you do.👍👍👍👍

Put a knife or fork or something taller and heatproof down over the burner when you turn it off so it’s still gently warming and tilt the skillet, and just wait, the residual warmth and tilt will cause the oil to go to one side, move the meat up a little and it’s easy to slip the oil out w a paper towel, or hold the meat back w the towel and just tip out the oil.Green and red onion would be prettier..lol..sorry, I like the flavors and extra colors. Extra spices, coriander powder, cumin, cilantro leaves, (I must be hungry now…) maybe roasted red peppers (ooh, or Fresnos!) diced really fine, yum, I can’t wait to try. Wish my hens hadn’t stopped laying just as all the peppers hit the stores! Subscribed! I’ll look through and see if you have tortillas, chicken tortilla soup, enchiladas, etc etc…

In our family we did not stuff a chile, to make Chile Rellenos. The old time NM way was to boil up a chuck roast or other large inexpensive cut of meat with some onion, salt, ajo, onion, bay leaf (optional) comino, and oregano. When the roast was cooked, remove from the olla, (the caldo is good for other soups, and freezes well) after it's cooled, run the meat through a meat grinder, (my abuela used a hand crank grinder, and everyone got in on it.) mix chopped green chiles (Hatch of course) and form into football shaped balls a little bigger than a golf ball. Dredge in flour, and let sit in the refrigerator for a couple hours, then with a slotted spoon cover in the egg (beat the whites till you get soft peaks, then add broken egg yolks folding them in.) Fry and after they have cooled a bit, enjoy.
