Here's a hint, when the edges of the crepe start to curl and pull away from the pan, then you can flip it. I have been making perfect crepes for over 65 years. And your pan needs to be really HOT.

Yes on a silicon cookie mat bake 350 8 mins Replace part of water with some egg yolks and perfect egg noodles. Add Italian herbs garlic bake then cut and make perfect lasagna. Layer and bake as you would and traditional lasagna. Makes great tuna noodle casserole.

For those interested, I did some math comparing to Indigo’s recipes and it seems to be almost the same the only difference is that they put a bit less water. Indigo’s recipe 10g gelatin 15g egg white powder 74ml water This one: 80g gelatin (Indigo’s x8) 120g egg white powder (Indigo’s x8) 550g water (Indigo’s x7.4) For quite a while I’ve been adding a lot more water to Indigo’s recipe because it feels less fluffy to me and more like pasta. But I will try this version, seems interesting.

I live a couple of hours from Toronto. If you let your Ontario fans know of your friends’ restaurant, we could go and eat there. Tonight, I made your protein noodles. I cooked them in a smaller skillet so they were a bit thicker and then cut them in 1/4” squares. We ate them as spaetzle with pork panko schnitzel and red cabbage. I tossed the spaetzle with your creamy steak sauce. The whole meal was beyond delicious. While I was cooking the noodles, Husband peeked over my shoulder and said, I bet those would make really nice tacos. I see quesadillas in our near future. Thank you for this recipe and for being such an inspiration. ❤❤❤

TIP: Just hit the tare button on your scale it zeros out so you don't have to turn on /off button every time you need a new measurement. Saves on battery life.

I tried these for the first time today! Overall a success, but mine came out too thick. I definitely found a silicone basting brush better to spread the spray oil than paper towels (less waste) and a crepe flipper saved my fingers.

Omg! Reminds me of my younger years when my grandma used to make her homemade noodles from scratch only I know this is a bit different but she used to take up the whole kitchen table to dry out her noodles. Man I miss her foods from scratch. WishbI could have learned cooking from her but she passed before I had a chance to be taught her recipes, etc. She had a recipe card file, I wonder if my Aunt got that! I could adjust some of my favorite family recipes to carnivore maybe. Had a lot of German and Irish recipesvI muss so much she's been gone since 1990. Miss you Grandma! She never brought store noodles unless they were homemade style especially on a fixed income. Anyway enough of that. Awesome this can replace noodles and tortilla wraps etc. Anything we can make from scratch is so much better for us in this busy convenient world today!

I’m bummed I measured all the ingredients on a scale like I was supposed to, it came out too thick, THEN, I thought I would use my cast iron pan, it was flat and round, the first 2 came out kinda ok, I used avocado spray for each one, but they started sticking!😢 I add a bit more water but for me it was an epic fail.😔. Update: I decided to try putting them in the oven, like in the other noodle video and it worked! 😅😊 thank you Maria for such great recipes!

@S Olson - to reheat, it works best to start by heating your sauce first. Then add the noodles and allow to heat through. I find that oftentimes if my sauce is hot enough, I can just let the noodles sit in there a few minutes and wah-lah! Ready to eat 😋
