Recipe for: Marinated fish in jars - Recipe for marinated Karakuda / Taranka
REQUIRED PRODUCTS: for 16 jars of 600 ml.
fish - 10 kg. (washed, cleaned, without heads and tails) This is a universal method for marinating fish. You can use most of the more famous fish for this recipe. Here are some species that become excellent in this way: bleak, mackerel, caracuda, horse mackerel, zargan, chernokop, herring and many others.
water - 5 liters
sea salt - 1 kg.
vinegar - 3.5 liters (good wine vinegar)
oil - 2.1 liters.

Bay leaf
METHOD OF PREPARATION:
Clean and wash the fish well. Cut the fish into large pieces. Put 5 liters of water and one kilogram of sea salt in a saucepan. Stir until the salt dissolves. Pour the brine over the fish. Press the fish on top with something heavy so that it is covered with brine. Leave the fish in the brine for 24 hours.
24 hours later. Remove the fish from the brine and let it drain for 30 minutes. In a large bowl, pour the required amount of vinegar. Put the fish in the vinegar and press again with something heavy. Leave the fish in the vinegar for 12 hours.
12 hours later. Remove the fish from the vinegar and allow it to drain. Heat the required amount of oil on the hob. Once the oil is hot, turn off the heat and wait for it to cool. Cut a few onions into large crescents.
Fill the jars by placing onions, allspice, black pepper and bay leaf between the pieces of fish. Finally, after filling all the jars, pour the oil into the jars. The fish should be covered with oil. Seal the jars with lids and let the fish mature for about 20 days. The longer it stays, the tastier it will become.
