Some tips from a mixed Chinese-Nyonya Malaysian: 1. Best add the coconut milk last, this will help avoid funny coconut oil smell. 2. Use fish sauce instead of salt for final flavour adjustment, the umami of fish sauce helps double the taste. 3. Use tamarind juice instead of lime/lemon juice. 4. If you can find Malaysia's shrimp paste AKA belacan, pan fried it or bake it over fire before adding it into the blender/food processor.

Actually, if you wash your blender and leave in the sun, the yellow from the tumeric disappears. My mom told me she used to hang tumeric stained whites in the sun to get rid of the yellow. It works on my nutribullet.

The Story behind the name is as such. The chef /cook was cooking Curry one evening. The ship's Capitan smelt the aroma of the cooking curry. So he asked the cook..." What are we having for dinner? I am Malaysia living in Kuala Lumpur. Your curry looks good and yummy. But there are many versions of curry in Malaysia - Malay Malaysian curry, Chinese Malaysian curry, Indian Malaysian curry, East Malaysian (Sabah Sarawak ) curry. But even within the Malay curry, different states in Malaysia has different versions - Kedah Malay curry, Perlis Malay curry, Kelantan Malay curry, etc. Malay curries generally do not use galangal, lemon grass, shrimp paste & kaffir lime leaves, in fact I thinks all Malaysian curry versions (even Chinese and Indian ones) do not use these four stuffs unless you do the "masak lemak" (creamy coconut milk curry) and "gulai siam" (Thai) curries which are different groups of curries altogether. India Malaysian curry does not use coconut milk whci all Malay and Chinese curries do. Curry in Malaysia, whatever version, does not blend stuffs like you do here: we use commercial pre-packed curry powder. Many brands of curry powder famous ones are Baba's, Lingam, Adabi, etc. Commercial curry powder may or may not be sautéed with blended ingredients (blended onions, garlic, ginger, turmeric etc). By itself, the commercial powder already gives good tasty curry. 4 spices - cinnamon stick, anise seeds, cloves and cardamom used all for meat curries (chicken, beef, mutton curries) but not for fish curries, while mixed fenugreek seeds-mustard seeds-cumin seeds-fennel seeds (halba campur) used only for fish curry. And curry leaves a must in all curry types. But in all honesty, all curry versions in Malaysia are equally delicious. Yours look yummy too. I make curry often at home but my kids are not fans of curry, unfortunately, but they'll gobble up Western dishes in a jiffy (spaghetti, croque monsieur, lasagna, pizza etc)

I always like and admire this dish. This is a fusion cooking , the embodiment of malay and chinese cooking which known as nyonya cooking historically. Linguistically, the word kapitan derives its name from captain in origin as a root. Yes, you are right Marion , this dish fulfiiled the old school captain back then.

I just made this recipe with Asian store bought red curry paste, added fresh garlic, ginger, onion, and jalapeños from a store bought jar (turmeric was mixed in after the blending). Instead of legs and thighs I used chicken breast, but added home made chicken broth instead of water to enhance the flavour. The final result is still very delicious when following the rest of the recipe.

I marinate the chicken pieces with tumeric for a few hours or overnight n deep fry and add to the sauce. Also add a few candlenuts to the paste. This recipe from a Peranakan chef.

I just buy a small packet of Adabi curry powder, small pack of 🥥 milk, 🌟 anise, cardamon bub, curry leaves, okra, 🥔, onion, garlic, ginger, galangal, lemongrass.... Mix everything in pot, put chicken.... Voila, simple🐔curry dish served.

Thanks for sharing. Finding these dishes brings back memories of mum making it in the kitchen and me smelling it from down the street as I walked home from school. Now mum's gone and being an only child/son, I'm trying to find all the recipes for the foods mum used to make as a way of connecting with her. Luckily, my wife loves spicy foods (I cook sambal tumis telur, beef rendang, etc from scratch). Going to try making roti jala (need to find one of those special scoops), keuh lapis and all my childhood favourite dishes mum used to make. Keep doing these videos.

I grew up in Nyonya country and curry is traditionally made the way you cook it.. fry the paste1st and coconut milk last; kapitan or not. Today I turn it all around; fry chicken (fennel seeds, dried coriander) 1st, then shallot, garlic, anion, curry & turmeric powder and no coconut milk but with very little water (I like the thick gravy). Taste as good and I will heat it up tomorrow morning to go with some bread. I laughed before you did about turmeric making your blender yellow.. hahaha

galangal, lemongrass and kaffir lime leaves are easy to buy as "Tom yum set" which is sold in most bigger supermarkets. Ginger is also easy to buy.
