Agreed completely! China is one of those places where foodies will have endless content. Everywhere in the world, there is good food, but in China in particular and certain other places (Italy, Mexico, Haiti, India, Iran, Indonesia, Vietnam, Thailand, etc.) the food content is absolutely endless, no matter how many food lovers show up. There's absolutely more than enough for everyone.

20 years ago I lived and travelled around China. I will always remember Xi'an. The people are the friendliest I met in all of China. The food is delicious too with all the dry spices and grilled fish.

Japanese ramen comes from Xi'an. Those are the original ramen noodles that were made by Chinese immigrants in Japan back in the early 1900's.

The history of Xi'an is indeed ancient. Xi'an is the capital city of Shaanxi Province, and even many pronunciations in Japanese can be traced back to the Shaanxi dialect. Because Xi'an was once the capital of ancient China, Japan developed its own culture from studying ancient China, which should have been a thousand years ago.

Yes, you are right, the dialects of southern China have indeed had more influence on modern Japanese, but the influence of Shaanxi dialect may have been earlier. For example, the tone word "です" in Japanese sounds similar to the repeated confirmation of "得私(dei si)" in Shaanxi dialect, as well as the affirmative expressions "そうです" and "说得私(she dei si)". There are also meaning problem "問題" and "麻达(ma da)", meaning sweep away "掃除" and "sao ji". Linguistics is complex, and I don't want to express that Japanese have learned from modern Shaanxi dialects, which have completely different from ancient times. However, it is interesting that we can glimpse ancient cultural exchanges from modern languages.🤔

"Ramen is not hand-pulled", yes, but you can find that the pronunciation is very interesting, hand-pulled noodle in Chinese pronounce as "拉面(la mian)", you can use translation software to listen to their pronunciation.

We were in this Ittle South Market 3 times in September. The rolled tofu bean curd at minute 3.38 is simply amazing, oroginal or spicy flavour. We loved them so much we even bought some to take back to our home country. And the smoked sausages were great. The pork knuckles buns were tasty but the best is 3 shops away, the minced beef and spring onions panfried bun. At 6.30am, the queue was already 15 people; by 7am, more than 30 people.

@lenoraneeley7010 I was in Guangzhou, Shenzhen, and Hong Kong, and every place in between. I've never had authentic Chinese food like that before even though my friend from Hong Kong visited my house in North Carolina to cook a fantastic meal forme and my family... and he didn't charge me! He even paid for the food! (However, I've eaten way over 10,000 meals in Chinese restaurants all over the world in the 26 countries I've been to. Very few times, outside of China, are they authentic meals. Ive eaten all major and someminor cuisines, notbing excluded.) I ate at two dozen restaurants total with my friends in China, and in return I cooked a HUGE Sicilian LOADED spaghetti dinner (many types of meat and veggies in the spaghetti, and homemade tomato and herb sauce), with salad and garlic toast. I fed 30 people. They were amazed at the Italian food. But I assured them I was much more amazed at the delicious Chinese food!

@@howardcheung5809 I've had all 8 and probably 20 or more minor sub-cuisines over a 50-year span of time in 26 countries, including China. Probably I have eaten more than 10,000 Chinese meals in the 26 countries I've visited. I've even learned to cook some Chinese food after my friend from Hog Kong cooked for us in 1989, 35 years ago! I am looking forward to my return visit to Japan, Hong Kong, China, Taiwan, Mongolia, and South Korea. And I want to visit Malaysia and Singapore again. And Thailand, the Philippines. and Indonesia. And India, Nepal, Burma, Vietnam and Cambodia while I'm at it! It will take me a full year to do all this visiting.

Xian is the city Chinese tourists visit to feel like you're back in the 1990s or as a stop before you visit the Terracotta warriors (Qin Shi Huangs tomb). Not a bad choice just curious why that would be the 1st stop and hoping it's not the last. Typically Shenzhen, Shanghai, Beijing, even Chengdu now would be 1st. For a foodie who loves spicy food Chengdu would have made more sense.

Very wise to choose Xi'an as the 1st stop in China. Xi'an is the ancient capitals of those most prosperous dynasties in China's history , Qin and Tang for example. Especially during Tang dynasty, people from other parts of the world travelled to Xi'an to trade goods via silk road, which resulted in some very unique food cultures (Chinese Muslim dishes) you can't find anywhere else in China. The city is my hometown and in my personal experience, has the best food in China! Many major cities like Beijing, Shanghai and Shenzhen are pretty much modernized in a western way with few historical context preserved. Xi'an, though being modernized in the same way, still has the best preserved city grid and fortification walls in China.The city has the vibe of old and new eras colliding in a dramatic way. Amazing place to visit!

We have some authentic chinese restaurant in our town. They serve Xi'an pork burger (肉夹馍), 凉皮, 刀削面. In Japan, authentic Xi'an cuisine is not so popular, but we like their original tasete. Thank you so much for showing us many Xi'an cuisine and Chinese friends.

I suppose that this would be my first KZbin video comment. My fiancee randomly watched this video and she found my father in it. Yes, my father, that man right behind Mark, standing in the queue, while Mark was having his 肘子夹馍 at 8:12. He was smiling, and staring at Mark. Maybe he found it's interesting. I miss him so much. I've been to Xi'an twice, and my favorite thing I have had there was the lamb soup (Yangrou Paomo), where you break apart the bread and then pour the soup on top. With plenty of chili oil and beer of course. Although the "pork burger" looked freakin' awesome. My wife makes the exact same meat which I usually scoop up with tortilla chips or wrap in a tortilla.
