Your enthusiasm Mark as always… I was born in a country surrounded by the pristine waters of NZ also plentiful variety. But seeing chefs drown seafoods in oil simply over complicated the natural flavours of seafood makes me appreciate the simple preparation of seafood at home in a Vietnamese cuisine.. I MISS HK and roast goose! Everywhere else its always roast duck. Love HK but seems people are more reserved now. Oh and just to show off I have had the abalone dish there. I LOOOOVED how you accurately explained how the pastry melts in your mouth. It REALLY does. And then the salty, fleshyness of the abalone kicks in. I am salivating. But you haven't lived until you have had roast goose in HK.
