Located across the street from Sultan Mosque at the corner of Arab Street and Bridge Road is the legendary Singapore Zam Zam, one of the most famous places to eat murtabak the entire city. They are nearly always busy, and while they do have a full menu of Indian dishes, including rice and curry, they are most well known for their murtabak.
Originally ar Arab food, murtabak in Singapore is often a combination of Arab and Indian flavors and cooking methods. The process begins with a ball of dough with is pounded out into a very thin sheet by tossing and flapping the dough. Once it’s paper thin, a mixture of spices and minced meat (depending upon what murtabak version you ordered) is mixed up into the middle of the dough. Next, one of the most important things to add is an egg - and at Zam Zam he expertly tossed in the egg, then mixed it up with his hand so it almost immediately mixed. The next step it was wrapped up into a package so the dough was covering all sides, and then it was tossed onto a hot skillet filled with oil where it deep fried and fried until crispy and golden brown on all sides.
I decided to go with two different types of murtabak, one filled with beef and one filled with chicken, and they were both served with a curry dipping sauce on the side. There were five different sizes of the murtabak that you could order as well, and I chose the medium size, but we got two of them to share. Both of the murtabaks were extraordinarily delicious, filled with a combination of minced meat and chicken, plus egg, lots of onions, and some spices. And having the bowl of curry sauce on the side to add to each bite, elevated it to make it even better. I thought the chicken murtabak was the best, but the curry sauce served with the beef one was better. So they were both delicious.

Hi Mark, After watching this video, I went just last week and ordered the chicken and mutton murtabaks at Zam Zam. I wanted to thank you for your recommendation, as the murtabak was excellent. I don't know which curry sauce went with which, but you are right, one of the sauces was definitely better than the other. Please do keep making these videos, as they are great to watch, and allow me to try great food in different places. P.S. My next destination in Bangkok and I can't wait to try more of your recommendations!

This has to be the best murtabak I've ever found, anywhere. It's a completely different style of murtabak compared to that found elsewhere - most murtabak in Malaysia and Singapore is heavy on potatoes, this has a lot of meat. Giant is the word! $5 gets me so much that I'll eat half of it and have the other half packed to get back to the hotel for dinner! Every time I go to Singapore I'll also bring a $20 one back home with me, we freeze it and bring portions of it out now and then. There's actually three shops, Zamzam is at the end, the middle one is called Victory, and there's a third (the name of which I don't remember). I ate at Zamzam the last time I was down there (I only once every 3 years or so, Singapore's gotten so expensive). For those of you who live in Petaling Jaya (or the western side of Kuala Lumpur), there's a restaurant, also called Zamzam, on the Sprint Highway, near the Damansara toll, where Lebuh Bandar Utama crosses the highway (near Centerpoint Mall). It's actually on the eastbound ramp leading down to the highway from Lebuh Bandar Utama. The owner claims he used to work for the Zamzam in Singapore - and the great news is that he sells Zamzam-style murtabak! And it tastes pretty good. Since it's only a few miles from where I live we buy it now and then. Now.. the WORST murtabak I've ever had was in Bandung, Indonesia - there they deep fry it! Once it's done they turn it on its side and all the oil pours out. Very different. -- Iskandar

I'm not a big fan of mutton because of some bad experiences with Greek food. Almost tasted as if it died of old age. The chicken Murtabak looked absolutely delicious. Another great video Mark.

hey mark, i'ved been away for 2weeks and since back to singapore i just watch ur all singapore series i can tell so far u enjoyed the fish curry, stingray and probably the murtabak, the rest of the food are pretty plain well i seldom eat them as well.. i will enjoy most eating masala dosai instead hahaha.. btw, i'ved been to bangkok for 2weeks for business trip i enjoy every single day i even skip my complimentary breakfast on my hotel just eat just opposite of my hotel with the street food ventor hahaha...

I first went to Sam Zam’s in 1970..stayed in Singapore for over twenty years..it was always a favourite. The stair carpet had to be changed every year because it was so greasy! Food amazing..consistently good. Unfortunately no licence for beer etc.
