BANGKOK, THAILAND - Today we’re going to ChefBing Pizzeria, where Chef Bing serves amazing New York style pizza in Bangkok, Thailand! What I think is so amazing about Chef Bing’s pizza is that he makes both traditional classic NYC pizzas and also makes pizza with a twist of Thai flavor and ingredients. The combination is amazing! #Pizza #NYPizza #Bangkok
Chef Bing has an amazing story. He lived in NYC for over 30 years, and so spent most of his growing up years in the US. He also worked as a chef in NYC, but surprisingly, not as a pizza chef. A few years ago, Chef Bing came back to his home country of Thailand. As a challenge, and to try something new, Chef Bing started experimenting making pizza, and after a lot of testing and trying, came up with his recipe for NYC pizza, and started Chef Bing Pizzeria.
It was so cool to watch Chef Bing in the kitchen making his pizza. He did everything with such precision and care, with extreme attention to detail - this is without a doubt one of the top reasons why his pizza is so outstanding. He takes care of every single pizza he makes.
We ordered 2 pizzas, a classic tradition of half cheese and half pepperoni, and a Thai topping pizza of grilled pork neck, culantro and toasted sticky rice. Both were fantastic. I did really love the traditional, with cheese and pepperoni as that’s the ultimate taste of NYC. However, the grilled pork neck was also fantastic. The crust / dough, which Chef Bing really puts a lot of time and effort into, is one of the factors that stands out. Thin and crispy with just enough crunch.

The best comfort food ever! I'm originally from NY so it presses all the right buttons. It's awesome even after being frozen and reheated. I freeze the pizza and eat it where I live down south.

I agree. I spent years in three Boroughs, Brooklyn, Bronx and Manhattan. Regarding the authenticity of the pizza... I concur! THAT is real NY pizza. You can tell by the scorch crust and the crunch when he cuts it. I really should buy pizza tomorrow. I want chili flakes, oregano and parmesan cheese. I may not sleep. I have to stop watching Mark's channel....at least for a while. It's so good, very unsettling.

Chef Bing took a long time to stretch that one pizza. A friend of mine worked at Di Fara pizza in NYC, he would have done 20 in the same time. Mark should go to Di Fara’s before the old man (owner) dies... he’s in his late 80’s still making pizzas. Mr Di Fara is a legendary fixture in the NY pizza scene.

Looks great!! I am curious to know what he is charging for the pizza and where are the customers. He doesn't seem to have a lot of customers. he also puts a lot of time into the pizza which is not good for production. What if he gets an order for 10 pizzas, would he be able to fill the order?

It’s be tough to make real money from Pizza business in Thailand because of food culture. I myself is pizza lover because its convenient and economically. I used to work in Rockland County in NY where there are at least 5 pizza restaurants which are unbelievable cheap and taste so good. Good luck!

@Food&Fun That pizza crust was New York City pizza crust to me. I could almost smell it from here. I've had plenty of NY pizza first hand. The bottom of that crust said it all. 😘

Tbh i dont think mark is fake in anyway possible. I think hes grateful to be so blessed, he loves seeing the in people esp peoples art and he can feel the passion and love this dude put into his work. And isnt it refreshing to watch someone who solemnly complains, whos never nasty. Tbh mark really inspires me

LMAO, I know Mark is ALL about that spice but I've got to say I've genuinely never seen anyone use that much chili flakes on a single slice before (at least on purpose, and not due to an overzealous pour or a loose lid)...and I worked in quite a few pizzeria's in my time! But hey, that's one of best things about Pizza's it's so versatile and it's basically purposefully made to be customized and for whatever toppings you like to be added...Well, except when it comes to Pineapple, that's something that should never be allowed. Period. (LOL j/k If it tastes good, who cares?) I wonder sometimes if he was always had his infamous love and high tolerance to super spicy food or if it was something he built up later in life as he started traveling and being exposed to all different kinds of food. I also wonder if it's something that you're just born with, for example people maybe people who can eat really spicy food their brain interprets the pain signals that spicy food produces differently or are dulled in some way, or if it's more of a mind over matter" deal where they feel the same pain as everyone else and it's something that they kind of train their mind/body to deal with, either actively or passively? It's something I've been interested in since I was a kid and is an ability I always wished I could improve! Because while I really enjoy eating spicy food, after only a few bites my taste buds just can't take it and that combined with the unpleasant "other" after-effects force me to limit my intake.LOL! Maybe one day I'll find away to increase my spice tolerance! I need Mark's secret!

I was born and raised in NYC. I put chili flakes on my pizza, but just a light sprinkle. I almost fainted when he poured so much on LOL.

I grew up in Montana, which is not typically known for spice, but I've loved spicy food since I was a kid. Part of my love for it came from my dad and older siblings who prided themselves on cooking hot foods (Thai, Mexican, Hot Wings). I remember going to Thai restaurants in elementary school and ordering the maximum spice level on dishes, only to be turned down by the waiter. One time the chef actually came to see if I ate the food. In high school, me and my friends would walk to a local pizza shop and I'd always pour a mountain of pepper flakes on my slice of cheese pizza just to show off. The pepper flakes usually weren't very spicy anyway; probably because they were kinda stale. I always disagree with people when they say "your taste buds are broken if you like spicy food," or "spice ruins a dish." Spice is no different from any other main flavor profile: sweet, salt, acid, bitter. A good meal uses a balance of all these things. Even as a supreme lover of spicy food, I don't enjoy a dish if its sole purpose is to be spicy. Spice should always be used to enhance/heighten the flavor. I think you can train yourself to handle spice. As a kid, my mom avoided spicy food, but over the last ten years or so, she has grown to cook/eat very hot dishes. For her, it came by experimenting with new flavors and genres of cuisine, and becoming familiar with different kinds of spice (szechuan peppercorn, thai chili, habanero, dried vs. fresh chilies). I'd recommend not paying attention to the Scoville Scale, as people tend to fixate on the "heat level" and not the taste of the chilies. A habanero is spicier than a jalapeño (and you should be aware of that), but more importantly, a habanero has a warm, sour, citrusy flavor, while jalapenos have a green, bitter, crisp flavor. Each deserves a place in your cooking, regardless of their spiciness. Also, play around with dried chilies. Many dried Mexican chilies are relatively mild and fruity (almost like a prune or raisin). Ancho chilies can be turned into a great condiment when soaked with brown sugar, vinegar and some other seasonings, for instance. If you garden, try growing some hot peppers. I love growing Thai Chilies or Bird's Eye Chilies. It can be really rewarding to eat a pepper you grew from scratch, even if it's a little too hot for your liking. Salsas are also fun to experiment with. You could make a fresh mango or cherry salsa. The sweetness of these fruits can be nicely balanced with some heat. If you drink, alcohol can make a great pairing with spicy food. Tequila + Corona Beer + Chili Verde. Sweet Plum Wine + Spicy Stir Fry. Lemonade and Rum + Jerked Chicken. I totally hear you on the negative after-effects of eating spicy food. To this I'd say, you got to find what you're comfortable with. If you're downtown Seattle, 30 minutes away from an accessible bathroom, maybe don't order the hottest thing on the menu (don't ask me how I know this). But if you're home, and it's a Friday evening, go nuts. Try something a little spicy. Enjoy the burn. Feel your forehead sweat. Pace around the room. It can be kind of a short-lived adrenaline rush. But then again, the positives may not outweigh the negatives for everyone. Stomach pain and acid reflux are very real and can be truly terrible. Hope this was an interesting read

I’ve been making pizza at home every week during this China flu and the dough is too thick, but still yummy. It’s more of a biscuit texture. I need one of those pans, some semolina and then I think I can get a harder crust.
