INGREDIENTS
1 1/2 lbs cooked seasoned chicken
14 to 15 corn tortillas
9x13-inch baking dish
10 oz Oaxaca cheese (sub with low-moisture mozzarella)
Cream Sauce
3 Tbsp unsalted butter
1/4 diced white onion
2 Tbsp diced chipotle peppers in adobo sauce
1/4 cup all-purpose flour
1 cup chicken broth
1/2 cup whole milk
4 oz softened cream cheese
1/4 tsp garlic powder
4 to 5 oz grape tomatoes
1 to 2 handfuls of fresh baby spinach
salt & pepper to taste
Bake covered in a preheated oven at 375°F for 30 to 35 minutes

I made these tonight and your recipe has changed the way I make enchiladas FOREVER!!! Of course I adjusted the filling to satisfy my better half, but I now have a sauce that is a lot better than the same old red sauce (which still has a place). This just gives me another option so I don't get the "again?!?!" reaction. I keep multiple bags of picked rotisserie chicken in the freezer for convenience anyway. If you are thinking about trying this, DO IT! You won't be sorry.

I had to add extra chipotles but honestly I could eat that sauce by itself! Barring that just shred the chicken into the sauce & top some crushed taco shells. Add whatever you want in it (sour cream, guac, pico de gallo) no need to bake. But...the sauce is bomb!!!

Came across your videos by chance. What an excellent chef you are. Not sure if you ever made before but I am trying to master cheese tamales. Had some by a home cook when lived in Dallas and they were awesome. Have tried to make. Discovered that in tamales steamed melty like cheeses (like pepper jack) turns orange and tough after a 40-45 min steaming. So you can't crowd them. Any cheese tamale pearls? Have you ever made them? I will look over your site to see if perhaps you have. I envy your skills and knowledge of mexican cooking.

**EDIT** THESE ARE PHENONOMAL! These are in my oven!!! I forgot I was out of spinach, bawl, so I used zucchini because hubby loves it. The sauce is DELISH!! I went a bit overboard with the chipotle, ooops. But YUMMY!
