OMG! This is Seven-Minute Frosting! My mother made this when I was a kid. The recipe made 'way too much for the cakes she made, so there was always a lot left in the bowl for me to lick. Thanks for a stroll down Memory Lane. :)

:D That reminds me of the time I made it, thinking it was regular frosting. I thought I'd ruined it! Then one of the moms said it was marshmallow frosting and the kids all loved it. I must say, your recipe is MUCH simpler than the one I used. And it looks beautiful on that dark chocolate cake.

I love it. It's so easy to make and you can divide it and use gel food coloring to make different colors. To me this is so much tastier than buttercream.

I've never tried it without putting it over heat first. I think it's essential if your working with egg whites

the egg whites were cooked.she cookd it over the boiling water in the pot. i tried that jst few days ago but it was swiss meringue buttercream thats what they called it. and it was delish

They're heated but these are not pasteurization times/temps. If salmonella is an issue (i.e., for the very young, elderly, or immune-compromised) then this wouldn't be safe. You can use pasteurized eggs; Davidson's in-shell pasteurized eggs work for meringue as per the manufacturer and my own experience; the egg whites sold in cartons usually specifically warn that they're not suitable for meringue, though I don't know why there would be a difference. In the case of the in-shell eggs they will take much longer to stiffen.
