Hi Deborah, Thank you so much for the kind words! I often find some nice eggs from local farms plus our friend's children raise chickens so I try to buy eggs from them as often as possible. For meat, I usually search out a fellow that I like at the local farmer's market. And when beef, etc., runs low here to do drought, etc., then I love to order from US Wellness Meats. Hi Mary, I have been making these for a long time. My diet doesn't allow potatoes or greens. I saute tri colored pepers, onions & taco or italian seasoning & use egg substitue with skim milk & cheese. They are so handy & freeze well.

Scrumptious! Thank you. If you don't have time to do the potatoes, I just break up small bits of bread - any bread will do - and put them in the bottom of the cup instead - then pour the egg mixture over. As for the onion, I use a pepper-onion frozen mix from the supermarket - chopped up of course! Only $2.49 for a 1 lb. bag!

Minus the potato, that's a keto meal we all love. But we half cook the bacon and wrap it around the tin and put the egg mixture in that.

I have seen other recipes that are similar, but yours sound better! The others didn't have the potato, greens, or the crisp bacon on top. They were basically onion, eggs, diced ham or other meat, and cheese. Some added bell pepper. I will have to try these after I get paid! (I don't have bacon or potatoes on hand)

Hi Mary I have a question but it's not about this video I hope this is okay but I'm trying to learn to ferment and I'm watching your videos but I think I messed up fermenting my pickles one of them grew mold on top of the water and the other ones I don't know if they're done but it's been over a week how long do I ferment these pickles and thank you so much for putting these videos out to teach us things we didn't learn when we were little

Hi Lola, all great questions! Don’t worry. Some thing that I always like to share with beginners is that ferments can be persnickety! Most vegetable ferments like to be fermented between 68°F and 72 2°F. If it gets warmer you risk the chance of mold and bad bacteria developing. So first and foremost you want to make sure you get them fermenting in a place where the temperature is going to give them the best chance of succeeding. Then, I often recommend that once you start to see some bubbling activity in the jar go ahead and refrigerate it. It will continue to ferment but just at a much slower pace but now you have significantly reduce the chance of developing mold. Hope this helps. My Japanese heritage uses diced, quickly sauted Spam. Yes, I said Spam. A great deal of Honolulu "street food" uses Spam so since it was a pantry staple in our kitchen for decades, I still grab a can from time to time to use for breakfast muffins like these, or fried rice, and even fried in place of bacon or sausage for the breakfast meat with scrambled eggs! :)

If I wanted to reduce the egg yolks how many egg whites would you recommend I use? These breakfast muffins look delish..

Great question. If you want to use less egg yolks, you want to substitute two egg whites for every one whole egg you eliminate…But I would recommend that you use at least one whole egg. Love, Mary❤️🤗❤️

I make these every Saturday. However, I'm really lazy and I never have milk in the house. I mix the eggs with a splash of water and add chopped roasted vegetables (I make a pan of roasted veggies every Friday). I might add some grated cheese if I'm feeling fancy. It comes together in no time and I have breakfast for half the week.

A delicious recipe...I do miss Las Vegas, Nevada a great deal because when I was living there I had the money necessary to eat out. I don't like cooking This is the reason, I cook a piece of meat with salad, or more meat with some potatoes and carrots or sweet potatoes. Mostly, I eat salads with a can of tuna because is easy to make and there is not a lot of cooking.

Made these over the weekend and only had 1 small problem. The cooked egg mixture stuck to the paper muffin cups I used. Had to tear the paper off in strips. Next time I may just grease the muffin tin and run a knife around the egg mixture after it has cooled down some and set up. Unless you have any suggestions for using muffins cups.

Hi Mary ! I'm not a huge fan of cheese (any kind). Would this recipe 'work' without them ?

Mary I made a Apple pie and topped it with a crumb topping. Flour, butter, walnuts, brownsugar. I have made tons on these pies. One day after I made it I put half in fridge and when I went to eat it a blue Gray layer had formed perfectly under topping? I still had Apple filling in other container was normal. It scared me so I threw it out. It did not smell bad and it happened in one overnight in fridge. I have never seen anything like that. I peeled the fresh apples myself , do you know what it was?

Hi, first I didn't go all out as you did for making these for the 1st time. Mine consisted of eggs/tomato/pepper/cheese/potato. I bought some paper liners for my pan, and they cooked up fine. The down side, was they stuck to my paper liners, a LOT. I had to scrape a lot off of the liner. Did you use a certain type of liner? Did you spray with PAM off camera? Mine were plain white paper, definitely the wrong thing to use. Thanks!

Oh dear!! So sorry to hear that your liner stuck. Were they older liners? The liners are used were made from brown recyclable paper. And they were new. I think most cupcake liners today have some sort of nonstick coating on them. I didn’t spray mine with Pam or anything like that. I would check out the baking section at your local grocery store and see what you can find as two liners and see if they mention anything about being nonstick. Love, Mary

@@MarysNest I bought them at walmart. [doah!] I stopped at 2 other local grocery stores and they didn't have large liners to fit my pans. Perhaps I'll look online.

Here you are again, dear lady, w/ another delicious recipe…..and I’m going to make it. If we lived closer, I would definitely invite you over for a tea party! It would be wonderful to share a friendship w/ you. When I was a young girl I had a pen pal from New Zealand. Although I never got to meet her, we shared letters and pictures for years. I feel like you are my pen pal. I am so blessed. I was going to ask you if Indy was female or Male? I just assumed he was male, but so many of your subscribers refer to “her”. Your a beautiful dog, Indy. Doesn’t matter Indy. It makes no difference to me!
