I watched your video 3 times before I attempted it. The ball was so dry and hard to get it to stick! Very frustrating. I added water a bit at a time, but was concerned about too much, so I'm sure it won't turn out.

Wow, I'm in shock right now lol, I'm 2 years retired from 30 years of cake decorating, never a baker. Well, I've watched tons of KZbin videos in these 2 years to learn how to bake all kinds of bread and rolls. My newest adventure has been the sourdough starter and bread, and I've successfully learned how to make a great loaf of sourdough bread with some definite learning curves along the way. I'm amazed at the absolute 💯 ease and perfection of your process and loaf! I baked today, but yesterday was prep day of stretch and folds, bulk fermentation, pre shape, final shape, proof on the counter, and in the fridge overnight... geez I feel like a nut lol, this looks so easy and amazing! 1 more question please...I have banneton baskets, and of course, I want to use them. Can I proof this dough in my basket upside down instead of on the baking pan? Then flip it out, score it, and put in the Dutch oven, like my regular way of baking? Thank you, Mary

This is actually a quick way to make a sourdough bread for beginners who do not like too sour a taste. It’s a short fermentation so some might not consider it “true” sourdough. However…This is great for children new to sourdough. Love, Mary ❤️🤗❤️

Lordy! I love that Mary scrapes the bowl. That’s how I learned from my mom who is 103yrs old. Mom learned, of course to not waste a bit, and taught us of “the hungry 30’s, when things were scarce. :) I squirm and will turn off cooks, chefs or bakers that aren’t conscious of the privilege they have to be able to bake anything, let alone have their own 15 minutes of fame on KZbin. Mary is the real thing!!! Now my husband will nudge me and suggest I “turn Mary on” for new ideas. 😂 👏

Hi Mary! Just made this recipe: I used bread flour, replaced 1/2 cup of it with whole wheat flour, and added a tsp of dry yeast for good measure. Just the right amount of bubbles, a great rise and awesome sourdough flavor. Excellent recipe for when you’re in too much of a hurry to spend a whole day making a traditional sourdough bun, this video is going straight to my favorites!

My beautiful Mary, I made the sourdough starter and this sourdough bread today. I followed your instruction without deviations, and my bread came out perfect. It looks just like yours and it tastes amazing. My husband watched me feed the starter all week and when he saw the finished product, he was very impressed. So, he named the starter Phillip. Hahaha. Seriously, he attached a name tag to the starter container. Thank you so much for teaching us. You are an excellent teacher!!!

I just made my first loaf after months of putting it off and just taking care of my starter. (Mainly because taking 2 days to make a loaf of bread wasn't something I wanted to do.) It turned out great, and was super easy!!! Thank you!!!

Hello Mary, I am a new subscriber 👍 I just love that you offer recipes that are easy for us beginners. Every time you say…. “but, if you don’t have ‘X’ don’t worry, it will work just as well with ‘Y’”. It always makes me smile and feel like I could try the recipe with what I already have in my pantry. I am a new homesteader that moved from the city and had take out every night, to the country (Texas,by the way) to cooking all meals at home. First, in case you read this Mary, thank you for all you do. I find great info in your videos and this in no way represents the way I feel about your videos or recipes. Now I know this is an old video but I've followed SO MANY and tried all sorts of different breads on here and many other channels. I'm about ready to quit on making bread. EVERY recipe I try is a fail. All my bread doughs turn out as either batters (typical) or they are tough and dry and don't rise enough, (sometimes due to trying to fix a wet sloppy batter). And you can forget about using a flour sack towel, a pretty severe crust forms and the dough never rises. And then the bread is HEAVY, even if it rises completely. It weighs twice that of store bought at least. I live in Michigan. Its hot 90+ degrees F and humid up to 90% (60-75% typical) here in summer and cold normally 15 to -15 degrees F and dry (5-20%) in winter. Never seems to matter. I could get sloppy batter in winter or a tough dry ball in summer. On top of my fridge is about 72-75 degrees F, this is where I proof dough and have kept my sourdough starter for nearly 2 weeks. I've tried unbleached all purpose to organic unbleached bread flour. I've used a cast iron Dutch oven, a glass 9x5 loaf, 8.5 x 4.5 metal loaf, and a baking sheet, NOTHING changes. My sourdough starter overflowed by day 9. Very active, lots of bubbles, lots of large air pockets, doubled in size in about 3 hours. I followed the recipe for the 2nd time on day 10 (first time was day 5, too early), let rest 30 minutes, dusted with flour but covered with plastic wrap, (tried flour sack towel first time I made this recipe and a dry crust formed) shaped and then started the rise with more plastic wrap. Checked my dough ball at 1 hour, still pretty small, I checked again at 1 ½ hours, not much changed. I waited another 30, small change again. The dough has been at 74 degrees F today on top of the fridge. I started baking after 2 hours rise. I used a dutch oven preheated for 25 minutes at 500. Not much spring. Loaf was about 4 inches high and 8 inches wide. Tiny. Dense. I don't think anyone can help me at this point. Bread is the worst thing I've ever had the displeasure of baking. I've tried at least 6 no-knead recipes, including this sourdough, at least 10 traditional kneaded recipes with kneading in a stand mixer to kneading by hand (I kneaded by hand for over 1 hour once for testing sake), I've even tried 2 Japanese Milk Bread with the cooked Hokkaido method. I know homemade bread will not be as good as store bought. Its always more dense, not great for sandwiches, regardless of some bread snob's view, and tastes okay. Its so frustrating that no recipe seems worth the effort and expense. I've burned through at least 70lbs of flour in the last 4 months. We eat the mistakes because we have to. Its like hate-eating. NO ONE wants it but we make ourselves. I get eye rolls from my family when they find out I'm making a new bread. No “foolproof” recipe has EVER worked for me. I've tried spoon and level, regular scoop, and by weight. I've gone a cup short of flour to a cup over just to see. I guess I just want to vent. Sorry to anyone who reads this monstrosity, its way longer than needed. I'm happy for all of you that have that magic touch, and I'm super jealous. I don't know, maybe I'm thinking I can polish a turd and get a diamond. Maybe homemade bread will only ever be like biscuits. Okay to throw some butter on but wouldn't make a good PB&J or even a grilled cheese. Has anyone else struggled to make a simple sandwich worthy bread? Am I, and my whole family, expecting too much from homemade bread? Should I just give up and buy bread as long as possible? I make almost everything else for my family. I dehydrate and can. I make many different cultured dairy products including cheeses. I make pasta sauces, pizza crust, pies, jams, I grow a veggie and herb garden, I planted fruit trees and vines, strawberries, I even crochet and knit but I CANNOT make a decent loaf of bread.

Mary, ThankYou! I, also, wanted a sourdough bread that didn’t require a background in chemistry 😳😬 so I made this ‘glorious’ loaf, just today. I wasn’t sure about it, as was pretty un-risen after 2 hrs, and I was fearing this would be my very last sour dough attempt🤨, but it turned out beautifully! It’s so perfect looking! ☺️☺️My gas range runs hot, so I did it at 450°F, 25 min covered, 7 min uncovered. So, because I can, 🙃 I’m going to make one with a tablespoon of apple-cider-with-the-mother-vinegar, tomorrow. Thanks for sharing all of your valuable knowledge, Mary. Especially comforting during these crazy days. 😘

Dang it, now I have to make bread 🥰 Today is the first time I have seen your videos and I’m not getting anything else done !!! I want to tell you how happy I am to see you teach people to cook by giving them options, not only with utensils but ingredients. I love to cook and encourage others to cook but so often I hear “I can’t cook”, my response is always, “just do it, that’s how you learn” !!! Then I hear about their “fears” and how they don’t have this or that and don’t know how to do this or that and not sure when it’s ready or what it should look like and what if it doesn’t turn out....and so on 😬 I explain how cooking is a lot of improvising, it gets easier and less intimidating once you get a feel for it and yes you may have something not turn out but that’s part of the learning !! You seem to have a way of taking the fear and perceived perfection out of the process and give people the encouragement to get started, which I think is wonderful because cooking is becoming a lost art ! I’m so happy I let my kids “experiment” in the kitchen when they were young....even through all the messes and flops because they all love to cook !!! Thank you and well done.....now I need to go make bread 🥰

My sourdough starter gas finally "started" :) I followed your recipe and video. I am happy with how it turned out, although it looks like a smaller loaf than yours, and the crust is a bit hard, but tastes good. I am excited 😊

Hi Mary. Made the sourdough recipe yesterday, used 2 cups of flour and 1 cup whole wheat. Had to add more water but it all turned out good and very tasty. Very rewarding experience for my first try at making a sourdough bread. Spending more time in the kitchen and enjoying the wealth of knowledge on your site. Thank You

My favorite part of any food tutorial is when the host tastes the food and makes yummy sounds. This video did not disappoint in that regard. She made me so hungry that I wanted to jump into the video and wrestle her for that piece of buttered sourdough! Anyway, the tutorial was a little long for my attention span because I just wanted the recipe and to see a FAST technique for FAST sourdough bread. But I stuck it out and watched it to the end. I'd been looking for a recipe that is faster without sacrificing taste, so was delighted to land on this demo. However, after making this FAST sourdough no-knead bread, I have come to conclusion that significantly reducing the fermentation time and proofing time DOES come at a cost. And that cost is flavor. I found this bread to be lacking the complex and interesting flavors of traditional sourdough. So, I guess the old adage, "Good things come to those who wait" is quite appropriate when you're talking about sourdough bread. Thanks for the recipe, though, I'm glad that I tried it.

Hello Mary, I tried your recipe for No Knead Sourdough Bread but had a couple of problems. No 1 after carefully measuring the ingredients the dough was very sticky and difficult to work with I had to add more flour when trying to shape it. No 2 although there were lots of holes the bread was very heavy and doughy and sticky despite me cooking it for an extra 10 mins.

This has revolutionized how I make sourdough! So simple, so elegant … so tasty! I’ve experimented a bit, I prefer weights so I use 100-110 g starter, 300 g water, 300 g Einkorn flour + 100 g all purpose flour, 15ish g salt & 1 T. ACV. I do two strength folds instead of just one. This loaf comes out just as well or better than by following all those videos with long, complicated techniques. Some have you start Wed night to eat bread on Saturday! And many contradict each other as to ingredients & time. LOL. Now I take my starter out of fridge on Friday, feed it & have yummy sourdough for Saturday dinner! Truly awesome technique. I nominate Mary for the Nobel Sourdough Bread Prize!

Love your videos! Initially, I followed you for your amazing bone broth videos (I loved your “veggie scrap freezer Tupperware tip” and that you use and reuse everything, hardly any waste). This one I watched for relaxation initially but now I’m gonna make sourdough bread 😬

Cannot tell you how much I love this. I have a sourdough loaf fermenting in my fridge that I started two days ago. Will likely cook it tomorrow. But as a very busy (who isn’t these days) wife, mom, full-time nurse as well as having pets and a decent sized family farm (about to go milk goats now), I don’t always have time, energy or the inclination to do a very involved, timed, hands-on sourdough. Sure, I do regular yeast doughs frequently. But I love sourdough and have a very active starter. I want my family to have the benefits of sourdough - and they love it - but I cannot always make the time commitment. There are plenty of “same day” sourdough recipes, but this makes it so easy to follow, concise and beginner friendly. And I love listening to your soothing voice and manner. It’s relaxing and non-stressful. Which we all could use a little more of in our lives. Thanks again!

So from what i understood its, 1/2 cup starter, 1 cup water, mix those 2 together whisk, then put 3 cups flour, salt 1tsp into a bowl mix then add the water mixture to form a dough. (Can add a little acv if we want). Leave for 30mins. Then do a simple letter fold shape into a ball on parchment paper use a little flour on your hands. Then leave to proof for 1 and half to 2 hours covered with a tea towel. Heat your oven to 500f if you have a Dutch oven with lid you can warm it place the dough in there and make a cut on top spray with a little water put lid on bake for 30mins. Then remove the lid and bake uncovered for 10 mins but check after 5 and if done take it out. If no Dutch oven can use whatever you have lid or no lid. If you feel it's to sour you can add a little bicarbonate soda before you bake it. I've finally made a starter so will try your recipe . I just have to make sure I have enough starter!. I will add in some acv I think. Thank you so much for sharing.

This reminds me of a bread I had that came from Italy. It was a traditional Italian restaurant with a northern flair. Also it reminds me of a bread my mom said her mom used to make in South Dakota. I’m gonna have to try it

I just made two loaves of sourdough bread following your recipe. I made one from a starter I started another from a very old starter that was given to me. It was super easy, the way you explained it made it so easy. They look perfect 👍 I can't wait for them to cool and cut into them 🤤

Thank you so much for making these instructional videos filled with grace. I made sourdough as a project for my advanced foods class in college (I was a home economics major at the time!) and loved how simple it was. Fast forward 30+ years... I bought a starter, made a great loaf, then it began to fail. Not to mention it was a very tedious overnight process with many steps. I got very discouraged. Tonight I'm encouraged by you to make my own starter once again and make bread!!! We will have homemade bread for the holidays! I can't thank you enough!! XOXOXOX

Good morning Mary from our farm in New Hampshire! A blessed rainy day this April 29th. We so need this rain for our pastures and hay crops. Thank you for for your channel and for this helpful video. I am trying a dry sour dough starter for my first bread and will try making a starter with Rye flour. I am in the process of converting my kitchen over to a more traditional version and appreciate the health benefits of organic sour dough bread. Many of us are in transition for various reasons. I stocked two farm pantries with some items that I knew were not the ideal, but we are on a budget. Initially, I was more interested in stocking emergency cases of dried pasta/rice/beans etc. during this pandemic. Now I am mixing some of these products 1/2 & 1/2 with their organic counterpart, with my final intent to convert to organic as much as possible. Your videos are a wonderful help, with great tips! I just switched over to organic steel cut oats, soaked in organic yogurt for my breakfast porridge from " Nourishing Traditions" by Sally Fallon and feel good about that. Keep making these fine videos. I look forward to following along in your kitchen! ~ Diane

Made this today and I had my doubts, but it turned out perfect! The only thing I did different was to feed my discard the night before, my crazy oven runs hot, so I baked at 450, then after 30 I take it out of the Dutch oven and brown it for 10 minutes on the parchment paper. I also don’t heat the Dutch oven ahead of time and I spray the bottom of the pan and top of bread before baking. This is sourdough in a pinch💖👩🏻‍🍳

just for clarification, one 1/2 cup of starter, two 1/2 cup of water(which is 1 cup), and 3 CUPs of flour. That's the 1:2:3 ratio, right?

I tried the 1, 2, 3 method. Do a search as this is a method I played with and learned from the fresh loaf. I know it as 1 part starter, 2 parts water, 3 parts flour. So it’s like 100g, 200g, 300g. Not 3 cups flour if you’re using 1/2 cups. Better to weigh, trust me, I’m a home bread baker and been doing no kneads for years.
