Yummy..... My mother loved these. She called them “Potato pancakes” Flour, egg, potatoes then served with a dollop of sour cream on top sprinkled with chives and served with a side of applesauce. Haven’t thought about these in years. There was a Hungarian restaurant called Hungarian Kitchen back in the 70’s in Old Delray Michigan by Detroit that served these, They were delicious.

@@cavalcadeoffood Sometimes I also use leftover stuffing (bound with an egg) to make stuffing waffles that are great served under the leftover turkey/gravy/cranberry.

For years my mom didn't know where the leftover Turkey stuffing disappeared, until she got up earlier than usual to find our dad making stuffing patties with his morning eggs.

One time I had leftover turkey and dressing and I made soup and made the dressing into dumplings. I just added stock, celery, onions and carrots. It was really quite good.

I think sour cream is the national condiment of Poland!! We put that on and in any and everything! My mother would make the best potato patties but no matter how I try I cannot copy hers. And her being 94 years old she can't remember how she made them either. These look so good with the fried onions. I will give them a try! And of course....with lots of sour cream. I never had these. My mom used to make what she called “finger dumplings “. 1 cup mashed potatoes, 1 cup flour and 1 egg salt to taste. Mom would form dumplings to look like fingers. I just form mine into round balls about the size of a walnut. Drop into boiling water. Give a quick stir so they don’t stick to the bottom of the pot. Once they rise to the top boil for 10 minutes. So good with melted butter or gravy. Delicious cut up with scrambled eggs. They don’t last long. I’ll have to try your way for a change. My mom used to add a can of tuna to those and served them with tartar sauce. Great lunch with a small salad!

Thanks for the reminder to add an egg. I tried to make these last winter and forgot the egg. I hadn’t made them in years and just forgot. These look very good with the yummy goodness of pierogies.

Kevin those look absolutely heavenly… I cannot wait to try them… I always tend to make way too many mashed potatoes that I need so this is a perfect recipe for me. My grandmother always used to fry out her mashed potatoes when we had leftovers and making them nice and crunchy but this time I’m going to try adding the egg and make them more pancake-like... also I have to tell you I absolutely loved that Tupperware flour sifter so I found a brand new one on eBay and bought one a few months ago! It is so handy and I used it when I made my Christmas cookies this year it’s such a great little contraption! And it matches my Mom’s salt and pepper shakers I already had (you have them too!) 🥰🥰 makes me feel like she is still here in the kitchen cooking with me ❤️ Glad you both are doing well! Jeff xo

Hi Jeff! You're like me - I always over estimate how many potatoes I'll need! It's ok because I always have leftovers for things like this! Hope you give it a try! Don't you love the Tupperware Jiffy-Sift? They do match the salt/pepper shakers! I have two - one I use for flour and the other for powered sugar. How nice that it reminds you of you mom - that's why I love that old Tupperware, it's the stuff that mom used all the time. Thanks so much!

Never thought of doing that before. Looks very tasty! I think someone may have mentioned this, but dredging them through flour, eggs and then bread crumbs before frying would be delicious!! Take care!

A bit like an English Breakfast item that I looooove, called Bubble and Squeak. You could also use it for something like a potato croquet Benedict, etc. This sort of thing is the best thing to do with leftover mashed potatoes!

I have had this sifter for many many years... Mine is a Tupperware sifter... That I use for powdered sugar! You should be able to find it!

Looks great! The only thing you did wrong leave the little piece of wrapper in. The person who gets that wrapper get a prize. Ps you put bacon chunks in the patty.We have used the bacon Grease to fry the patties

It’s called a spoon rest, and is used to keep from getting oil, sauce, etc on the counter.
