I'm adding this video to my playlist. Those little gadgets work wonders, you just have to use less filling. I bought a set with 5 sizes some years ago and I use them for plantain tarts, coconut gizzada etc and I love them 🤗 think the brand was smart cook. Will let you know how my patties turn out.

Hi Clifton, Great question... Because I want to look fancy. Lol 😆 just kidding From research, I found out that lemon juice helps to lighten the dough, making it a more flaky texture and preventing it from becoming tough. If you're referring to the ice water, it helps keep the butter and shortening from scattering throughout the dough, which also helps keep the crust flaky. I have experimented without both, and the pastry wasn't the same. Hope I answered your question
