I think the effect is better. People who aren't normally angry make the biggest impression when they do get angry. Gordon is angry whenever there's a delay or problem in the kitchen so we're pretty used to seeing him like that. Chef Michael on the other hand never raises his voice even in group challenges so seeing him angry like that must be scary.

I love how everyone claims Gordon's mean yet he's actually quite nice on Master Chef unless you totally screw up something or cause a huge mess or undercook something dangerous. He's fairly forgiving when it comes to mistakes because he knows they're not professionally trained. Joe on the other hand... Joe is asked to be that way by the producers. It's better for them as Gordon has his reputation as a chef and teacher but Joe's reputation is a restaurant owner so it doesn't mean as much if he acts mean. Edit: also, Christine Ha said that while she found him intimidating, he was very nice to the people on set and only acted rude when the dish was really bad.
