PeachE they needed to be chilled that's why the frosting ontop looks so messy and dripping. The pastry as you noticed is fresh out of the oven so the stuff aren't adhering as they normally would. But since this is a pressure test they're basically all just rushing and so skip this part out, which you normally shouldn't when baking.

I'm not sure about the six hours, even if you haven't made them before but you have experience with baking it shouldn't take over 3 hours. Though it obviously depends on the quantity you are aiming at. They genuinely aren't that hard to make so I'd say it's worth a shot :)

But what Claudio did was kind of a mean thing to do. Telling Mary, who was already worried cuz she was told her eclairs weren't right, to take off her apron, then told her to head to the gallery. But what was the a-hole part was he called her name, told her to take off her apron, had her crying cuz she thought she was eliminated, then told her to head to the gallery. Those chefs got to realize they're only glorified cooks, they're not all that and indestructible...

Mary’s eclairs remind me of when Eric was doing so many kinds of donuts. She did many flavors of pastry cream. I feel like cooks being ambitious with their cooks set them apart from others, and truly leads them to success.

Some of these challenges are ridiculous they want chef quality at almost a fast food speed. I don't think the judges even could pull off a lot of what they are asking of the contestants. I really kind of dislike it.
