I don't like the way the contestants talk about injera...it's not really an "acquired taste", unless you're a picky five year old. And they're told pretty clear instructions on how to do it, but they don't follow any of the advice and then complain it's too difficult. Also wish they'd stop comparing it to pancakes, it's a flat bread for goodness sake

This video was hard to watch. Why would you roll it after it’s made? It’s going to stick to each other. Also it’s not an “ingenius” idea to use the mat that is the traditional way. How else are you supposed to get it in a circle if you’re pouring it in a random way? It won’t spread easily you’re supposed to be pouring form the edge to middle in a circular way.

In Eritrea we call the hot pan a magogo and almost none of the finished products were correct. The batter is poured outside in and we wait until bubbles appear on the surface then cover. After a few moments we see if it has cooked through and we slide the meshrafet under and let cool on the stack. Each piece is soft. Nothing crunchy. It would not be rolled until it cools, if at all. Usually it is stored flat.

Injera is not exclusive to JUST Ethiopia. It is a main staple in both countries Ethiopia and my country Eritrea. They are very similar but Eritrea is underrepresented. Just wanted to put my country on the map. 🇪🇷✊🏾
