Matkichi Usal
Servings - 4
INGREDIENTS
Moth beans - 150 grams
Water - 600 milliliters
Water - 1 litre
Water - 700 milliliters
Ginger - 2 teaspoons
Garlic - 2 teaspoons
Coconut - 1 teaspoon
Oil - 2 tablespoons
Mustard seeds - 1 teaspoon
Cumin seeds - 1 teaspoon
Curry leaves - 1 tablespoon
Onions - 70 grams
Green chili - 1 teaspoon
Tomato - 120 grams
Turmeric - 1/4 teaspoon
Paprika - 1/2 teaspoon
Coriander powder - 1 teaspoon
Salt - 1 teaspoon
Red chili - 1/4 teaspoon
Water - 350 milliliters
Garam Masala - 1/2 teaspoon
Coriander - 1 tablespoon
Coriander - for garnishing
PREPARATION
1. In a bowl, add 150 grams moth beans, 600 milliliters water and soak for overnight.
2. Place a clean cloth on a bowl, add soaked moth beans and cover it. Rest for overnight.
3. Transfer, this into a bowl, add 1 litre water and strain it.
4. Add 700 milliliters water and wash it well.
5. In a muddler, add 2 teaspoons ginger, 2 teaspoons garlic, 1 teaspoon coconut and muddle them with the hep of muddler.
6. Heat 2 tablespoons oil in a heavy skillet, add 1 teaspoon mustard seeds, 1 teaspoon cumin seeds, 1 tablespoon curry leaves and stir well.
7. Add muddled mixture and cook for 1 - 2 minutes.
8. Add 70 grams onions, 1 teaspoon green chili and cook for 7 - 8 minutes.
9. Add 1/4 teaspoon turmeric and stir well.
10. Add 1/2 teaspoon paprika, 1 teaspoon coriander powder, 1 teaspoon salt, 1/4 teaspoon red chili and cook for 2 minutes.
11. Add moth beans and cook for 1 - 2 minutes.
12. Add 350 milliliters water and cook for 2 minutes.
13. Cover it with lid and cook for 10 - 12 minutes.
14. Open the lid and stir well.
15. Add 1/2 teaspoon garam masala, 1 tablespoon coriander and cook for 1 minute. Remove it from heat.
16. Garnish with coriander.
17. Serve hot.
