I think the hash browns flopped because your potato/water ratio was wrong. You definitely did NOT use a pound of hashed browns, so there was too much liquid and you ended up with the mash.

Funnily enough if he used dried Hungry Jack cheap hash browns and added water, it would have been perfect. That's what Waffle House uses. Just add bacon fat or butter and it's perfect.

The "Turbo cooker" is a big wok like non-stick pan with a big oval lid that has a valve steam escape valve to mimic a pressure cooker with a metal grill add on, marketers really knew how to spin this to sell it as "innovative cookware".

As a general PSA, since the Turbo Cooker was manufactured in the early 2000's, the non-stick coating may contain PFOA which has since been banned because it is absorbed by the body and never eliminated and leads to a number of health issues.

The hilarious part is it probably would have fried if Kathy hadn't told you to wipe off all the fat. That was NOT enough oil to "fry" anything, and instead of the water evaporating and turning to steam, it just got absorbed into the potatoes hence the watery mash + scorching/burning on the bottom. Not enough oil even for nonstick with all those starchy potatoes. Anyway this video was gorgeous. I'm excited for "Spaghetti Carbonara" now!
