To my West Indian people, look no further for a paratha or buss up shut recipe! This one is a keeper!!! The tip on using *less baking powder* is golden! The final product (especially the day after) will *still* remain soft. Chef Matthew, you have done it again ☺️ Thank You!!! Oh Matthew, I'm from Trinidad and saw a tip from Shanty's Chulha (in Trinidad) and realized your grandma did something similarly. I realized they both did not _knead_ the initial dough too much or too long... They essentially just brought it together and smoothened it... I tried it and it worked!!!! I mean, they both have decades of experience so you can't go wrong 😊

Great vid! Understanding everyone’s environment is a bit different can you tell me roughly how much water you used? I’m just trying to get a sense is it between 1-3 cups or more like 5+. A rough estimate should help me get close then I can fine tune. Appreciate you posting these recipes!

If you look at my older roti recipe I add some sugar and oil. Depends on my mood to be honest. Sugar helps it get brown on the tawa. The oil helps with crispiness and softness. And if you add salt it helps preserve it and gives a little flavor.
