after so many times re heating that poor chip and cooling and heating again at 360C, yes the chip is soldered finally but is it gonna be alive?

This method is good, i tried it a few times and had good results, I have a 32 pin qfn to replace, and my question is - manufacturer recommends max 260 C reflow temp, so what should I set the hot air gun temp to?

This method is quite risky about damaging the board or the component.. Using hot air that long is definitely not recommended

I have to wonder if the central pad is sometimes not soldered after repair, notably since the pad is a heat sink. When the QFN package first came out I had an awful 2 hour experience with a tiny leadless 8-pin (9 with the pad) QFN where I found I could either have that pad not be soldered properly due to too little duration of the hot air, or I'd get the soldering correct with a longer duration but then the chip was destroyed. So I sent it out to an assembly house who mounted and supposedly checked it with an X-ray, but on return I found one pin not connected. Fortunately I was able to touch it up, but what a hassle. The manufacturers prefer these leadless packages since there are no leads to break off in their test fixtures, but they really need to come up with a better option. I always avoid designing these parts in when possible, but often they give you no choice.
