Heat is the key to improve/upgrade cooking. Instant searing heat (200 C plus) seals the surface of food stuff thus retaining the flavours and keeps it moist. Otherwise, texture is lost and it gets too dry. That's the main difference between home and restaurant cooking. Detailed demo solved/illustrated many myths on woks here, much appreciated. Lovely, clear to the point narration is a big plus, McFatty. Well done.

According to Lodge’s instructions on their official website, the wok is pre-seasoned. All you need is to wash it with hot water. Then dry it. You’re gd to go.

not real fair comparison. lodge is thick cast iron (yes pre=seasoned). I think you should compare one from Shanghai street ( Chan chi kee), thinner cast iron, NOT pre-season (yes you need to season yourself). I got one before, very delicious cooking,
