You did awesome. One suggestion in the future is to slice it as near to paper thin as possible. There is a special knife that’s similar to a vegetable peeler. Pancetta is a meat that you place on your tongue and it literally melts on your tongue. Great video !

That looks good to me. After what we've been taught, it's hard to believe that any kind of fat is good for us, but it is. The roof corners on my grandpa's smokehouse roof were low like that. Cuts on our foreheads almost became a family trait. 😂👍

Both looks great...I think I told you about smoking salt in your smokehouse... Yeah I know it's hard to light..lol😂 I remember you doing just that, one time... That paprika you used. It may say smoked paprika. But it's like they drove it by a Smokehouse, at 90 miles an hour. Try a big container like you were using. Pour it out on a flat pan. Let it smoke several hours, in heavy smoke... Paprika were really retain the flavor of smoke. Cayenne pepper along with garlic both take up the smoke flavor. Thanks for the great video...

Our friends down the road have Mangalista pigs. We harvested 2 about 250 lbs each. Made sausage, cubed and of course a bunch of lard. We might have to give this a go. Is it still drinkable because you only use wine to marinate what you would drink and that’s why Chef say don’t use cooking wine because that stuff is disgusting and you know with you being a Christian and people go to judge, you saying about drinking wine if you do, you said if you I would say, are you without sin?
