You did awesome. One suggestion in the future is to slice it as near to paper thin as possible. There is a special knife that’s similar to a vegetable peeler. Pancetta is a meat that you place on your tongue and it literally melts on your tongue. Great video !

That looks good to me. After what we've been taught, it's hard to believe that any kind of fat is good for us, but it is. The roof corners on my grandpa's smokehouse roof were low like that. Cuts on our foreheads almost became a family trait. 😂👍

Two things I was shocked by about this video... 1. Frank did not let you use one of his secret stash bottles of Thunderbird wine for use, and.... 2. Frank did not bust out singing his cover of Dean Martin's... "That's Amore" after tasting it....... Thank you for sharing these moments with us....😊

Both looks great...I think I told you about smoking salt in your smokehouse... Yeah I know it's hard to light..lol😂 I remember you doing just that, one time... That paprika you used. It may say smoked paprika. But it's like they drove it by a Smokehouse, at 90 miles an hour. Try a big container like you were using. Pour it out on a flat pan. Let it smoke several hours, in heavy smoke... Paprika were really retain the flavor of smoke. Cayenne pepper along with garlic both take up the smoke flavor. Thanks for the great video...

Our friends down the road have Mangalista pigs. We harvested 2 about 250 lbs each. Made sausage, cubed and of course a bunch of lard. We might have to give this a go. Keep the Mangalista recipes coming! Not many people are fortunate enough to be able to have access to them tasty pigs. Thanks Micha from Middle Georgia! 👍

The nephew is waiting for me and my sister to die and he expects to inherit from us. Not a chance. I'll leave it to someone who isn't lazy and is doing good. Someday he'll regret all the laziness.

Brother Micah it’s Jeff from Pennsylvania did you ever try making cracklens from your fancy pig sorry I can’t spell mangalitza no brother Micah I know that’s old wine and your mother made. Is it still drinkable because you only use wine to marinate what you would drink and that’s why Chef say don’t use cooking wine because that stuff is disgusting and you know with you being a Christian and people go to judge, you saying about drinking wine if you do, you said if you I would say, are you without sin? If so, throw the first stone, then I would say Jesus was at a wedding and he made barrels of this stuff so I know you know the scripture I know you could handle it if people say you’re doing wrong you’re not doing any wrong you’re awesome brother God loves you and so do I
