Easy! Lazy man MCO Lockdown recipe! Just add all ingredients in, you can enjoy it after 2 hours slow-cooked. Best, especially you don’t need to cook the next day.
My late Mother cooked her Lo Ark Braised Duck with Galangal. Thought why not I cook the same for my Au Tau Yew Bark.
Ingredients
Serves 8.
4 Star Anise
4 Cinnamon Sticks
1 Med Ginger, smashed
2 Med Galangal Nam Kio, washed, smashed (wild ginger) if you can not find at your country. But any wild ginger that smell good!
2 Bulbs of Garlic, washed, smashed with skin
1 Tbs of Five Spies
3 Tbs of Chinese Thick Dark Soy Sauce
4 Tbs Say Sauce (optional)
Sea Salt to taste
1 Tsp freshly ground Black pepper,
2 Tbs Chicken Stocks ( home cooked liquid is great)
1 Kg Pork Belly, cut into 3 inches square ( get your butcher to cut it)
8 ps of Soft Taufu.( Bean curd). No need to cut.
16 boiled eggs ( peeled, need not worry you over cooked it. Add more if you like)
The amount of Water slightly higher lever than the ingredients level of your deep cooking pot.
Cooking
Boil hot water to cook the pork belly just a minute. Strained and put all into your deep pot, add water and all ingredients except the Eggs and Taufu. Cover, cooked with heat until it started to boil. Turn to Med low heat slow-cook for an hour, add all the eggs, after another 30 minutes, add all the Soft Taufu. Slow-cook them until the meat tender. Add some water if like more soup, if the colour too light, add another table spoon of Dark Soy Sauce. Personally preferred not too dark.
Cooked overnight, It tastes even better the next day, and the next day. Serve with bowls of White Rice or Chinese Steamed buns, Mun Tau.
