My husband and I eat a vegan whole food plant based diet. I totally get what you mean about having more prep to avoid processed foods. To be truly prepped for the week I usually need a very efficient 2 or so hours/week. I've gotten better about prepping larger quantities of the things we eat often that also freeze well We really enjoy what we eat especially in the summer. I suggest trying splitting the basil in your pesto with garlic scapes in the summer, it's my favorite combination and also freezes well. My next project is to try using my instant pot to make homemade yogurt with Soymilk.
@27foxplace Жыл бұрын
2 hours for me to get everything done, too. Some weeks I only have about an hour to wash and chop the produce and make lunch for the week . Even that little bit goes a long way. I miss yogurt! 🤤Need to figure the Instapot, too. Right now it’s is collecting dust. 😕 thanks for the tip! 🥰
@samanthab5006 Жыл бұрын
@@27foxplace in my early 20s I did some form of Paleo for a month with a friend. It was a bit more restrictive than your diet (no dairy, grains, beans) eating more produce while cutting out dairy and processed foods makes a big difference. We use the instant pot to cook grains, quinoa, dried beans, steam broccoli and batch cook potatoes (which we eat a lot of and prefer cooked then roasted later in the week for dinners). The yogurt recipe I'll be trying is basically get soy milk (has to be only soy beans and water)(I imagine you could use any milk that meets that criteria), add either probiotics from a capsule or store bought yogurt with live active cultures, mix in a mason jar, put the jar in the instant pot and run the yogurt program. My parents are not vegan and have an instant pot collecting dust. My dad also puts his stainless steel pots and pans in the dishwasher but yours come out looking much nicer.

Thank you so much Randi, I knew had. Substituted the nuts but wasn't sure about the rest of the ingredients. Can't wait to try this recipe. Going to try to grow basil again, I seem to have a way of killing it!!😢😒
