Like a rough but kind occa uncle who comes round when mum's feeling a bit off, tousles your hair whilst calling you 'champion', takes over the kitchen and cooks the family the best thing they've eaten in ages.

When you’re prepping the onion that goes into the mince, you can also use the large holes on a box grater and just grate that shit. Definitely no huge chunks and it’ll get you more onion flavor 😊👍

Made this tonight. Had to substitute a few things I didn't have, like any bread, so went with crushed saltines instead of breadcrumbs, and then cut out adding salt to compensate. Also had no pork mince, so used mild Italian pork sausage squeezed out of its casings instead. With the sausage meatballs I decided to add a little crushed fennel seed as spice since I had no basil on hand, and then used chopped fennel instead of minced onion in the meat mixture. Added the oregano to the tomato sauce instead of basil and omitted the chilis though I added a bit of red pepper flakes for a mild heat. Since fennel is a bit sweet I also omitted the sugar but loads of people love a sweet note in tomato sauce so who cares. Came out absolutely great. Can't go wrong with pasta and meatballs almost no matter how you make it. Someday I will get all the ingredients and make the recipe to the letter so I can pretend to know what a real champion tastes like. Fuck jar sauce!

You have a few options, you can dice it up and add it to the frying onions and garlic when making the tomatoe sauce and you also have the option of slice them in half, scoop out the seeds and then grate them or dice them very finely and add to the raw meatball mix. Mack sure you scoop out the seeds though otherwise you will add bitterness and the meatball mix will be too wet. 😊
