Couscous, the food so nice they named it twice, is by far one of the most underrated grain ingredients out there today. This couscous salad recipe is an amazing alternative to boring old pasta and potato salads you see at every picnic, bbq, and dinner party. And what’s better than just any old couscous salad? Mediterranean couscous.
What is couscous exactly? It’s a type of North African semolina that comes from crushed durum wheat. The semolina is turned into a dough dry dough, entered into a rotating drum where small balls are formed, steamed, then dried, and separated by size. The resulting product is ready-made couscous that just has to be steamed on the stove or in the microwave. It’s a staple in North Africa but is consumed in mass quantities all over the globe today.
This couscous salad takes a Mediterranean twist by utilizing ingredients like lemon, chickpeas, olive oil, feta cheese, and fresh herbs.
