Baked lima beans or "γίγαντες φούρνου" as they are called here needs lots of fresh rosemary. Adds a depth of flavor and aroma. Thumbs up

Tip from a Greek chef is to skim the foam as the beans cook, reports it helps eliminate "gas" from the beans.

Lima beans was one of those things I couldn’t stand as a kid. Maybe if I had them like this it would have been a different story. They’re typically just buttered. At least in the states. So I see this as a huge blast of flavor that maybe many kids could enjoy with this recipe. Thumbs up!

Looks delicious! I will definitely try this recipe. If you would like to be a hero to some of your viewers, tell them if they have gut issues, they need to do more than just soak the lima beans. Because of anti nutrients that are on and in the beans, the beans need to be rinsed, washed, rinsed and soaked at least 12 hours. After soaking, they should be washed and rinsed again before cooking. If they don’t, the anti nutrients can exacerbate existing gut issues. These anti nutrients can bind to the gut wall and prevent the absorption of minerals, like iron, calcium, magnesium, manganese, phosphorus etc… I have had a lifetime of trouble and recently found out that my condition may be due to these anti nutrients. Beans, peas, lentils, grains, nuts and seeds all have these anti nutrients. If you are a vegan and dependent on those foods for your protein source, you may need to do more preparation, especially if you have gut issues. New subscriber!

I made this tonight. I didn’t have lima beans on hand so I used some Rancho Gordo cassoulet beans. I extended the cooking time a bit Because after they suggested cooking time, they were not done at all. I think it finally ended up baking for about 90 minutes. Obviously I had to add some more liquid so that they weren’t dry it out. But the flavor is very good I’ll definitely make this again. I was a little unsure about the mint but I kind of like it

I have made a similar recipe before on the stovetop following a recipe which used a lot more olive oil.....I must say I like this version much better. I will make it again for sure! Thanks so much for sharing. I don't care for watching too many you tube videos with cooks trying to be chefs, but I really enjoyed this one....you do a great job at being a regular guy who cooks and seems to enjoy it even with a snafu or two.... ...cooking with a glass of wine is a big joy in my kitchen!! :) I will check out your other videos... I'm not vegan, but I'm always looking for more vegetable recipes. Thanks again!

The results of this straight forward but ingenious recipe are restaurant quality. Exactly the taste and texture of a lima bean dish I have been searching for. I have been meatless since the 70s and the backbone of my diet is rice and beans. This is a keeper. Thank you! If I want to convert this to a Ratatouille by adding veggies like eggplant, do you suggest I increase any of the ingredients ?

I'm so glad you loved it too! I like your thinking--I wouldn't imagine you would need to adjust anything really, except maybe a bit of water if you feel everything is a bit too thick. Or just keep an eye on the cooking time.

@@riarenaissance8702 oh, definitely! I would probably just keep it on the stove on low heat for around the same time, then uncover and simmer for that additional time to reduce a bit. It'll be fantastic I'm sure!

This is Greek Gigantes. The recipe is almost spot on to my Mom’s but in lieu of maple syrup she and many of her friends, would grate some carrot for the sweetness. I mean, there isn’t anything akin to maple syrup in Greece. And she didn’t add vinegar, perhaps red wine but only a smidge if she had it.

I'm sure you could--they just might be milder. However, I would really try to search out the larger lima beans. I think the size/texture really adds to the dish!

Love this recipe, but I must protest -- you NEVER saute the garlic before the onions! Do the onions first, then put in the garlic for just a few seconds at the end. Never ever over-saute your garlic, it will get all dry and bitter and nasty. Onions First!
