'Mee goreng mamak' is a specific stir-fried noodles dish sold at Mamak eateries in Malaysia and Singapore. It is stir-fried over very high heat together with a special paste along with 'cucur udang' (prawn fritters) which is synonymous with these noodles.

Mee goreng mamak is a fried noodles dish which is commonly found in mamak eateries throughout Malaysia and Singapore. One of the most popular cities in Malaysia that serves mee goreng mamak is Penang. This noodle dish is popularly known for its sweet and spicy flavours with some nutty taste to it. Although this may be not the exact mee goreng recipe that you want, rest assured that it is an authentic version.
Mee goreng mamak paste
The paste used in mee goreng mamak is no more than a combination of several sauces. It has a blend of dried chilies, shallots, dried prawns, dhal and also peanuts. Dhal, a common ingredient in Indian kitchens is a term used for dried split legumes. Adding it to the paste gives the noodles the mild grainy texture which mee goreng mamak is known for.
Prawn fritters
Besides the paste, prawn fritters are the other ingredient that makes mee goreng mamak different from the rest of the fried noodles. Cucur udang as it is known in the Malay language adds some crispiness to the noodles. Biting into the spongy and soft insides of the prawn fritters makes the noodle dish so much more interesting.
Substitute for yellow noodles
Mee goreng mamak uses soft medium sized egg noodles. The noodles do not have the al-dente texture that is more known in western noodle dishes. In Malaysia and Singapore, fresh yellow noodles are sold either in loose form or in a package at the wet markets. In Asian grocers, yellow noodles sold are dried and usually marketed as egg noodles or 'chow mien' noodles. Otherwise, substitute with spaghetti. Just soften it before frying.

I just tried it.. The mee goreng turned out perfect !!! Exactly like the ones in mamak restaurants.. I added a half a cup of hot water after adding the noodles then stir fried a little longer.. Coz i felt like the noodles was a little tough.. Thanks you're the best!!!

There seems to be a lot of work involved in cooking this simple dish which is supposed to cost only RM5-6 at a mamak store 😂? That's why I just let the mamaks cook them for me at the stall. Anyways, thanks for sharing and the great video.

I always knew there was something different in mee goreng mamak 😅 i made asian style stir fry noodles but the taste is incomparable to mamak style! I didnt know there were peanuts and dal in it

The secret to Mamak Mee Goreng is in the paste, and the ingredients are family secret. That's why one stall has that special umph, while the others are run of the mill.

The original mee goreng mamak will also have another ingredient: green peas. I don’t think cabbage is the actual vegetable used in mee goreng mamak.

That highly depends on the mamak. For example in Malaysia, we usually see cabbage or sawi. We've also seen green peas being added to the mee goreng. But that version of mee goreng is slightly different.

Amazing video! :) My husband loves mamak mee goreng and I'm trying to make it for him... but he recently became allergic to prawns / shrimps! So my question is, is there any possible substitute to the dried shrimp in the mamak paste or can I omit the dried shrimp?

You can just simply omit dried shrimp. Adding dried shrimp helps with the flavour and unfortunately, there isn't a close substitute :( Looking forward to your food snap on our site!

Is the paste fiery spicy hot? How do you tone down the spicy heat from the dried chilis? What about sweet chili sauce or ketchup? I've seen some recipes call for those. Yours did not have these sauces. Please advise if sweet chili sauce and ketchup is requiered.

looks authentic recipe similar to mee goreng from the roadside. Wok needs to be hotter, i.e.full flame...What happens to the tomato sauce? This is the closest recipe to the original mee goreng I can find on KZbin. Thanks.

We chose to not use tomato sauce in this mee goreng mamak recipe and would like to stick to the most authentic recipe before sharing other 'simpler' mee goreng mamak recipes which are available. Yes you may Rohit. Sometimes chicken can be added. We usually add cabbage and Chinese mustard greens as shown in the video. But it's your recipe once you are cooking it. So, feel free to use your favourite vegetable. Though....broccoli will be weird ;)
