I love all of your videos and watch them often! I have your cookbook (my Mom AND my Aunt both got me one last Christmas, so I gave my Mom my extra one!) A quick way to shred boiled chicken is to put it in your stand mixer bowl and turn the paddle attachment on a minute or two! Hey Meme, you remind me of my grandmother. She lived in her kitchen and even had her TV in the kitchen and watched it from the kitchen table. She cooked for the whole family and picked me up from school God bless you and your family and keep on cooking

Omg,thank you MeMe! This recipe was absolutely delicious, my family loved it. I did make a few changes or additions. I pressure cooked my chicken with salt, whole onion and bay leaf, then when I mixed it, I added some garlic powder and pepper and I used fresh grated Parmigiano Reggiano cheese. I put the ritz topping but reduced the amount of butter. We served it over rice, it was so great! Thank you, thank you! 💐

Your recipe is so close to mine. I use Monterey Jack cheese in mine instead of Parmesan. I also add some poppy seeds to the crumbs. I serve it with rice, that I cook in chicken stock. Hello from Aiken, SC!!
