legumes benefit from an overnight soak in soda bicarb water. keeps them from going mushy and de-gasses the diners.

you obviously don't have vegan friends or family. those are fighting words and i commend your valor. i myself am a coward so i will chop the chorizo extra fine before slipping it into the pot. use chicken instead of veg, sneak in some lard too, tell them it's coconut oil.

Creo que añade azúcar para contrarrestar la acidez del tomate, la cual también pondría duras las lentejas (lo mismo ocurre si echamos la sal al principio... la sal al final). He visto que algunos chefs añaden un trozo de mantequilla cuando agregan el agua...quizás podría ser una alternativa al azúcar.
