Wow, genius! I added some jalapenos for some kick and made some sauce to top it. If you want to go over the top add some chorizo, my mother in law is from Mexico and never even heard of meatloaf. She is the best abuela cocinera EVER and was dubious. But she took a little taste just to be nice. Then she ate the whole thing! Now she lets me cook for her, well whenever she has errands to run, otherwise her kitchen is a no fly zone. I did leave out the corn because I didn't have any but dayum it's good!

I would top this with salsa for about the last ten to fifteen minutes before taking it out of the oven. This looks like one I absolutely must try! :)

Hey Catherine, I made this Sunday morning just passed. I adjusted 2 taste & came it out awesome! I used 4 eggs, red & green pepper, hot salsa instead of tomatoes, 1 whole big onion, fresh corn off the cob, and steamed. Thx. Honey! Did the creamed Italian spaghetti last weekend, awesome, so I'm on board. I, just gotta watch my portion or servings or just stare @ my waist....hehehehehehe! ☝👍👌😎

I make something like that but I put potato carrots and onions any roasting pan and then put the meatloaf on top and let it cook and boy it’s good. I love this from a cousin of mine

It came out so moist and delicious! 😋 The Mexican meatloaf looks really good too! Never would I have thought to put the chips in it. I used to make meatloaf for my hubby frequently. After he passed away I swore I would never make another meatloaf. However, I do believe this meatloaf will be on the menu. Looks so good. I use the H..E. B tortilla chips btw.

Well we love tacos, and a Mexican meatloaf to me looks like a giant deconstructed taco with the taco shell on the inside!! Wowzer this looks so, so good! Have you had a chance to try the Walmart brand Chili Lime Tortilla chips? I like to keep those around for several recipes and I think it would be great in your recipe too, YUMMY. God bless you guys. I made a meatloaf last week with leftover rice pilaf. Oh my goodness was that delicious. My favorite meatloaf is with Uncle Ben’s long grain and wild rice mix, but this one with rice pilaf may have dethroned it. I always mix ground beef and pork. About 2 to 1 combo, beef the larger number, but you can go 1 to 3/4 as well. I don’t recommend 1 to1, but that’s a personal preference. This looks delicious minus the corn. Can’t handle corn.

Hi Catherine , I realize this isn't a new episode but , it looks sooo good & delicious I just had to comment ...I'm absolutely going to have to make this , with a small salad & some steamed Normandy mix vegetables with of course a little Taco seasoning sprinkled on top with either a baked potato or mashed to round this out , also some quartered soft flour Tortilla shells warmed up for my bread ...This looks like the perfect centerpiece to a full great meal... I make what I call taco meatloaf, same thing. However I always use a mixture of ground beef and pork and taco seasoning for flavor as well as a little cheddar cheese in the meatloaf. Of course there are the usual add-ins. No peppers, tomatoes nor onions. Just onion powder. Top with enchilada sauce and a little cheese toward the end of baking. It’s a favorite. I used to serve with a crispy seasoned French fry that I haven’t been able to find for years, but were delicious. Now I make a potato dish and mix in cheddar and pepper Jack cheeses, also delicious. I don’t buy chips. I just always use bread soaked in milk.

Wow - I'm not a great cook by any means and this turned out DELICIOUS! The only problem is that I made only 1/2 the recipe using only 1 lb. of ground beef since there's only two of us. Well, it was so good we ate the entire thing in one sitting. Couldn't stop ourselves. Next time I'll make the full recipe so (hopefully) we'll have leftovers!!
