I’ll go out on a limb here, this is NOT a polyrhythm. It’s two different phrase lengths, but they’re EVEN phrases - 5/4 against 7/8. It’s still crotchets against quavers, a 1:2 ratio. The bars don’t line up is a giveaway. A true polyrhythm is where the bar lengths in terms of time they take to play are the equal but the ratio is ODD. The “Pass the god damn butter” example is a 3:4 or 4:3 Odd ratio. You imagine a pulse of 12 ticks you have the 4 notes starting on Beats 1,4,7,10 so each lasting 3 ticks. The 3 notes begin on 1,5,9 each lasting 4 ticks. It’s one of those things that’s easy to draw a picture of but a bit tricky to say in words.

check out tone wood amps, they allow you to do some cool stuff on an acoustic.. Tapping for example.

The least common multiple of two numbers is at most x*y so the two pulses could meet up with less cycles.

Actually, you'll have to play the x time signature y times ONLY IF x and y are coprimes.
