When you make Swiss meringue buttercream, does it make stiff peaks? I only have hand held electric mixer and I can make Swiss meringue just fine but I could only get to soft peak before adding butter unless I keep whipping over the pot or change to much smaller bowl to incorporate more air…

i always want to try recipes as they are bc i know development takes time and a lot of trial and error - and possible modifications have been defended for per developing the recipe - but i REALLY dislike swiss buttercream lol. What’s an alternate frosting you’d suggest that would still work well with all the elements? i’m thinking a milk choc ganache but I wanna know Cupcake Jemma team’s thoughts!

you could do a regular buttercream and it would work the same :) if you look at their previous videos, the one before this was the white choc + raspberry cupcakes which i made, use those same ingredients and the same method but add milk choc instead of white :)

For this passion fruit/choc combo, I was really curious about a deeper and richer addition of the choc, hence feeling inclined toward a fudgier frosting as opposed to traditional buttercreams. But a milk choc American (or even Ermine) buttercream could play wonderfully here!

I would totally do milk chocolate ganache. Personally I don’t like milk chocolate American buttercream as it’s too sweet and you can’t really taste the milk choc.

What is the storage solution for these trypes of cupcakes. Specifically those involving double cream. Fruits. It's hot here in Singapore. I tried putting in a tupperware and in just 2 days i see mold. I dont want to put in the fridge because most if the cake is made of butter. It will harden and most likely dry out the sponge

Unfortunately, in hot climates it’s going to have to be a fridge situation until serving, just take out about 30 minutes before to come to room temperature

A technical question. Is the bicarbonate providing the lift on its own in the cupcakes, or is it meant to react with the acid in the purée like it might with vinegar in a red velvet? Sorry for the nerdy question lol. Cupcakes look amazing!

Ok! I always wonder if you guy's end up with a baker dozen. Because I do when I use your recipe. When Dane transfer the batter in the measuring cup I notice that he stop and I'm almost certain that mosta been some batter left in that bowl LOL. I love bakers dozen.
