Exploring "slow coffee", here I combine moka pot coffee with DeLonghi-frothed-milk to make two cappuccinos at once. See how I use 3 jugs to get consistent foam in both cups. You can use this three-jug juggle technique with a Dedica or any other machine just as well.
Note: I am not yet a latte-artist. For how to make perfect shapes, there are many other tutorials out there!
**THE MOKA POT**
In short, it is a coffee pot, water boiler and filter without its own heating element and it comes in various sizes. Per extra cup of coffee that you want to make, you’ll need a moka pot one size larger. I’m using the smallest size, good for one cup of coffee.
The coffee it makes falls under the “slow coffee” category and you will need beans that have gotten a “filter coffee” roast. I clocked in at around 8 minutes total serving time with my electric grinder. With my hand grinder, it took about 6 minutes longer.
The volume I get per cup is about 60ml or 2 ounces and ready to drink with lots of flavour. In this video, I split a single serve over TWO cups to make two soft and easygoing cappuccinos. I used washed Ethiopian Heirloom with a filter coffee roast, from Badeta Amsterdam. You can use omni roasted coffee just as well!
**GRINDER SET UP**
According to the handbook I used, the coarseness or finesse of your grind should be that of “fine salt”, achieving a 60 second total extraction time for your cup of coffee.
In both cases, my average extraction time is 30 seconds instead of the recommended 60 seconds. Why? I found that with this particular coffee that is naturally high in acidity, more than 30 seconds added too much bitterness for my taste. The enhanced sourness that I now got, made for a refreshing cappuccino and was also sippable straight up. Same as with espresso, you will have to find your own sweet spot for each coffee and setup you use. Here’s what I did:
Zassenhaus hand grinder
With my Zassenhaus hand grinder I used a weight guideline from a book, “Koffiekenner wordt je zo / Le café, c’est pas sorcier”.
15 Grams pre-grind was the recommended weight for a single cup, so I kept grinding 15 grams at various coarseness levels until I got close to the desired taste. After about 7 tries, I ended up at 80-95% finesse, using 15.8 grams. Note that a single bean added 0.1 grams pre-grind weight.
With 80-95% finesse, I mean 8.5 to 9 on a coarseness scale of 0 to 10, 10 being finest! In the case of this Zassenhaus model, this meant screwing the adjustment wheel almost to the top, at 80-95% of its total range. Total extraction time was around 30 seconds. More finesse increased the time but made this coffee too bitter, so I settled for 30 seconds.

Since I had started with “dialing in” the hand grinder-moka pot set up, I now knew what flavour to look for. With my Graef electric grinder, I then just ground coffee at various coarseness levels, not minding the pre-grind weight at all. I simply ground until I roughly got the same coarseness as with the hand grinder. Completely filling the filter each time, I kept the end volume the same anyway, regardless of weight.
The extraction time was even less less importance to me than before. Once I got the best taste, all I needed to do on the next rounds was to grind coffee at that particular setting, until the filter was full. The setting I ended up using was 15 on a scale of 0 to 20, 0 being finest. Note that I had added an extra 0.25mm washer underneath the cone for more finesse, see my Graef cleaning videos for more on adjusting its factory settings.
These are just examples of how I got to my desired cup, consider them rough guidelines and try for yourself!
