These nutrient-packed dosas are not only rich in flavour but also contribute to a healthy diet. Follow this comprehensive method for a delightful breakfast or brunch experience.

Preparation time: 8 hrs
Cooking time: 30 mins
Calories: 149 cal per portion
Ingredients:
Whole ragi 1 cup
Urad dal ¼ cup
Methi seeds 1 tsp
Water as required
Salt 1 tsp
Water as required
Ghee 1 tsp
Coconut oil 1 tbsp
Mustard seeds 1 tsp
Curry leaves 10-12 pcs
Green chilli chopped 1 tbsp
Ginger chopped ½ tbsp
Onion sliced ½ cup
Salt 1 tsp
Turmeric powder ½ tsp
Green peas ¼ cup
Carrot grated ½ cup
Potato boiled 3-4 pcs
Water as required
Coriander chopped 1 tbsp
Paneer 100 gms
Method:
Preparing the Ragi Dosa Batter:
Start by meticulously washing and cleaning one cup of ragi, half a cup of urad dal, and a teaspoon of methi seeds.
Transfer the cleaned ingredients to a bowl.
Combine them with water and allow them to soak for a duration of two hours.
After soaking, transfer the ragi, urad dal, and methi seeds to a mixer jar. Blend the ingredients into a thick batter, adding minimal water.
The batter should have a thick consistency.
Transfer the blended mixture to a bowl and set it aside for a fermentation period of 6-8 hours.
Once properly fermented, add salt to taste and adjust the consistency with water to achieve the desired dosa batter thickness.
Preparing the Vegetable Stuffing:
In a heated pan, add a touch of coconut oil.
Once heated, introduce mustard seeds, allowing them to crackle.
Follow this with the addition of curry leaves, chopped green chilli, and ginger.
Sauté the mixture to release its aromatic flavours.
Proceed to add sliced onions to the pan and sauté until they attain a translucent.
Add salt, turmeric powder, green peas, and grated carrot to the pan.
Cook the mixture until the vegetables reach a tender consistency.
Introduce boiled and mashed potatoes to the pan, incorporating some water to achieve a well-mixed consistency.
Finally, add chopped coriander and stir the mixture.
Your delightful vegetable stuffing is now ready to elevate your Ragi Dosa.
Cooking the Ragi Dosa:
Heat a flat pan and pour the fermented ragi dosa batter, spreading it thinly into a flat circle. Drizzle ghee over the dosa for added flavour.
Grate paneer generously on top of the dosa, creating a savoury foundation.
Place the prepared vegetable stuffing in the centre of the dosa.
Fold the dosa into your desired shape once it achieves a crispy texture.
The Ragi Dosa is now ready to be served.
Serving:
Present your Ragi Dosa with Vegetable Stuffing with a side of coconut chutney and sambar for a complete and fulfilling meal.

Yes! You can have the aata added in the mix after mixing the rest of the ingredients in the mixer. Then add the Ragi aata
