Nimki, a delightful and crispy snack, pairs perfectly with the tangy and spicy flavours of tomato chaat, creating a symphony of taste that's hard to resist. Let's delve into the step-by-step method of preparing this tantalizing dish.
Ingredients:
Refined flour 1½ cup
Ajwain ½ tsp
Kalonji ½ tsp
Jeera ½ tsp
Black pepper crushed a pinch
Salt ½ tsp
Ghee 1 tbsp
Water as required
Oil for frying
Ghee 1 tbsp
Jeera ½ tbsp
Hing ½ tsp
Garlic chopped ½ tbsp
Ginger chopped ½ tbsp
Green chilli chopped 1 tsp
Turmeric powder ½ tsp
Red chilli powder 1 tsp
Coriander powder 1½ tsp
Salt 1 tsp
Water as required
Tomato diced 2 cups
Tomato puree 1 cup
Jeera powder ½ tsp
Garam masala ½ tsp
Sugar 1 tsp
Coriander chopped 1 tbsp
Green chutney 1 tbsp
Sauth chutney 1 tbsp
Chaat masala a pinch
Jeera powder a pinch
Red chilli powder a pinch
Ginger juliennes 4-5 pcs
Method:
Nimki:
1. Prepare the Dough:
Start by taking a plate and combining refined flour, ajwain, kalonji seeds, jeera, crushed black pepper, and salt. Mix these dry ingredients thoroughly.
2. Add Ghee:
Incorporate ghee into the flour mixture and rub it to achieve a crumbly texture.
3. Knead the Dough:
Gradually add water and knead the mixture into a smooth, tight dough. Cover the dough and let it rest for 10-15 minutes.
4. Portion the Dough:
Divide the dough into small portions. Take one portion, apply a bit of oil, and roll it into a flat circle.
5. Create Nimki Shapes:
Make straight gashes within the circle and roll it into a shape resembling a karela or bitter gourd. Press the ends to secure the nimki.
6. Deep Fry:
Heat oil to a medium temperature and deep-fry the nimki until they turn golden brown and achieve a crispy texture. Once done, place them on a kitchen tissue to drain excess oil.
Tomato Chaat Topping:
1. Prepare the Masala:
Heat ghee in a pan and add jeera, hing, chopped garlic, chopped ginger, and chopped green chilli. Sauté until they release their aroma.
2. Add Spices:
Add turmeric powder, red chilli powder, coriander powder, and salt. Sauté the masala, then add a little water and cook until it forms a thick paste.
3. Add Tomatoes:
Introduce diced tomatoes and cook until they soften. Incorporate tomato puree and cook for an additional 4-5 minutes, adjusting water if needed.
4. Season and Garnish:
Add jeera powder, garam masala, and chopped coriander. Mix well, and the flavorful tomato chaat filling is ready.
Assembly:
1. Prepare the Plate:
Take a serving plate and crush some nimki on it.
2. Add Fillings:
Top the crushed nimki with the prepared tomato chaat filling, green chutney, saunth chutney, and a sprinkle of chaat masala.
3. Serve:
Your tantalizing Nimki Tomato Chaat is now ready to be served, offering a delightful blend of textures and flavors that will surely satisfy your taste buds.
